This watermelon salad just might be the best thing I’ll make all summer!
It’s Mediterranean inspired, has two kinds of fresh herbs (I couldn’t decide!) and the simplest vinaigrette you’ll ever make.
Whether you need an extra side dish to make for a summer gathering or want to serve your family a light lunch, this salad will not disappoint!
What You Need to Make this Paleo + Vegan Watermelon Salad
Salad:
- 1/2 of a whole watermelon
- English cucumber
- small red onion
- mint leaves
- basil leaves
- dairy free feta cheese crumbles (I used Follow your heart vegan feta)
Dressing:
- extra virgin olive oil
- red wine vinegar, or balsamic
- pure maple syrup (optional)
- fine sea salt
How to Make This Watermelon Salad:
In a large serving bowl or salad platter, arrange the watermelon cubes with the cucumber, onion and fresh herbs.
Sprinkle all over with the dairy free feta cheese.
Whisk together the dressing or place the ingredients in a small jar and shake to combine, then pour over the salad and serve right away.
How to Make this Salad Whole30 Friendly
For a Whole30 watermelon salad, omit the maple syrup from the dressing, or sub in date syrup. Then, swap out the vegan feta cheese for diced avocado.
You can also use avocado instead of the feta cheese if you can’t find a good vegan feta.
If you have dairy in your diet, feel free to use real feta cheese!

Ingredients
Salad:
- 1/2 of a whole watermelon cubed
- 1 English cucumber sliced in half lengthwise, then sliced into 1/2” pieces
- 1 small red onion chopped
- 1/4 cup mint leaves roughly chopped
- 1/4 cup basil leaves roughly chopped
- 1/2 cup dairy free feta cheese crumbles I used follow your heart brand*
Dressing:
- 1/4 cup extra virgin olive oil
- 2 1/2 tablespoons red wine vinegar or balsamic
- 1 teaspoon pure maple syrup optional
- 1/4 teaspoon fine sea salt
