Until April 10 of this year, I did not have a good blender. As a food blogger, it’s honestly embarrassing for me to admit.
Not only did I not have a good blender, but I really didn’t have a blender at all, at least not one that actually made smoothies smooth.
Which meant I never actually used it. So, this old, sad blender was reserved for those rare times that we had guests over and Adam insisted we make frozen margaritas. See? That doesn’t really count as having a blender at all.
Of course, I’ve had my life-saving immersion blender for years to make mayo and sauces, as well as my food processor to make cashew cheesecakes and Whole30 sauces sweetened with dates.
Now, as much as I love those two gadgets (appliances?), smoothies were still missing from my life without a good blender.
My dilemma was always this – I wanted a GOOD blender, but didn’t want to spend $600. Or even $400, really.
So I wound up blender-less, making the best of what I had and trying to forget about all the possibilities that a really good blender could open up for me.
Here’s what wound up happening – and a true desperate-mom moment it was. You see, my middle daughter decided to stop eating breakfast. I was frustrated, and of course ran straight to Instagram stories to chat about it.
I got probably 50 messages, at least, telling me I should start making her smoothies. Really, it was more like 100 messages.
The overwhelming response made me realize that I needed a blender, finally! Even if the smoothies didn’t actually work. It didn’t matter at that point – it was the final straw that led me to the way overdue blender.
And, like I said, in desperate mom fashion, I went for the refurbished Vitamix right then and there.
I started throwing anything and everything in that blender, just to experiment.
Side note, Emily started eating her scrambled eggs again a few days later and NOT the smoothies, but oh well, I was happy to have a big world of pureed stuff open up right in front of my eyes.
Besides, it turns out my little guy, Drew, likes smoothies, which is awesome since he is my pickiest eater! The good blender truly lets you “hide” things in a smoothie – score!
Anyway, forget the kids for a minute and my (yawn) blender story, and let’s discuss this vanilla cheesecake smoothie!
I followed a similar formula as when I made actual cashew cheesecake, but of course made it drinkable, sweetened completely with dates (thank you blender!) and decided to throw some cookie crumbs on top to go with the cheesecake theme. In the recipe box, I give you a paleo cookie as well as a vegan cookie recipe to go with the smoothie – of course, they’re both entirely optional.
Without the protein added, this paleo smoothie is also vegan, and to keep it vegan you can simply add your favorite plant based protein. For those who are collagen protein fans, a scoop or two of collagen protein/peptides will be perfect here!

Vanilla Cheesecake Paleo Smoothie with Protein {Vegan, No Added Sugar}
This amazingly delicious Vanilla Cheesecake Paleo Smoothie is loaded with good stuff! It's sweetened with dates and is completely dairy free, paleo, and vegan. Add a scoop of your favorite protein or collagen for a nourishing snack or dessert!
Ingredients
- 2/3 cup raw cashews I did not soak them first, you can if you prefer
- 4 medjool dates pitted (softened first, if necessary)
- 3/4 cup full fat coconut milk *
- 1/2 cup unsweetened almond milk *
- 2 tsp pure vanilla extract
- 2 1/2 Tbsp fresh lemon juice about 1 lemon
- handful ice
- 1 scoop protein powder or collagen peptides optimal
- Crumbled vanilla wafer cookies optional**
Instructions

Place all ingredients (except for the cookie crumbles) in a high speed blender <---what I have and love, and blend until very smooth. Serve right away topped with cookie crumbles if desired
Recipe Notes
*If you use all coconut milk, make sure it’s the “light” version since full fat will be too thick. Using all almond milk will result in a thinner, less creamy smoothie. **For vegan cookie crumbles, use my n'oatmeal raisin cookie recipe without the raisins!

Oh my goodness…this is soooooooo yummy! It really does takes like cheesecake!!! Super easy to make, especially since I didn’t have to soak the cashews. I have a Blendtec and had no problems getting a totally creamy smoothie. I made it with my kids and followed the recipe exactly, but without the wafers. I think next time I’ll add strawberries for a strawberry cheesecake! Yum!!

This is sooooo good! I love it! However it definitely isn’t enough for 4 servings. I only maybe 2 8 oz cups full and I added extra almond milk. That would make this like 500 calories if it made 2 servings only. Not a deal breaker but just to be aware.

So delicious and I was surprised how much it tasted like cheesecake! I used frozen spinach in place of ice, vanilla Nutpods for all of the milk and two scoops of collagen and it was great!

This is probably one of the worse smoothies I’ve ever tasted. Putting lemon into nut milk to curdle it in order to simulate cheese is never a good start. I found it bland, sour and too watery.
