These grain free and Paleo Strawberry Banana Bread Breakfast Bars are soft, moist, with just the right amount of natural sweetness! With the addition of creamy cashew butter and sweet strawberries baked in, these bars are perfect for a healthy breakfast or snack.
Hi guys! I’m VERY excited to share this seriously easy, delicious recipe today that happens to use some of my very favorite products. You know by now I’m pretty obsessed with creamy cashew butter (and bananas) in my recipes, and, these Strawberry Banana Bread Breakfast bars totally indulge my obsession!
Seriously, this cashew butter. Doesn’t it look incredible? I discovered my favorite nut butters years ago, actually prior to my Paleo diet, at Stop and Shop – my go-to local grocery store since we moved into our house almost 7 years ago.
Nature’s Promise Free from products leave out all the unnecessary junk you don’t need – like artificial colors, flavors, and preservatives – and are high quality and extremely affordable. I’ve been a big fan for years!
Since my kids were babies and we moved to NJ, I’ve always purchased Nature’s Promise products of all kinds – from organic bananas, to eggs, to meats, to nut butters – and anything and everything in between. My daughter Diana actually laughed when I told her I was featuring Nature’s Promise products in this post – she reminded me that our house is filled with Nature’s Promise EVERYTHING, right down to our hand and dish soap 🙂
So, at this point, for me, Nature’s Promise brand is just comforting, because I know I’m getting a good product at a good price. I am definitely very “ingredient conscious”, and, I’m consistently impressed with the simplicity of Nature’s Promise Free From products. Even as a Paleo eater, it’s very easy to make good choices at my local Stop and Shop while staying within budget – thanks to Nature’s Promise!
I decided to create a recipe that my whole family would love featuring Nature’s Promise cashew butter, frozen strawberries, bananas, and eggs – products we have in our house at all times!
These Strawberry Banana Bread Breakfast Bars are very simple to make, grain free, are free of refined sugar. They’re super kid friendly and easy to make ahead of time to grab for breakfast or a snack on the go.
The creaminess of the cashew butter really adds to the perfectly moist texture of these bars, add healthy fats and still allows the banana and strawberry flavors to shine through. They’re sweetened with just bananas and a bit of pure maple syrup, and contain coconut flour for extra fiber and healthy fats. Let’s get to the recipe!
Strawberry Banana Bread Breakfast Bars {Grain Free & Paleo}
Strawberry Banana Bread Breakfast Bars {Grain Free & Paleo}
Ingredients
- 2 large organic cage free eggs
- 2 med/large bananas overripe, mashed
- 2/3 cup creamy cashew butter
- 2 and 1/2 tbsp pure maple syrup grade A, divided
- 2/3 cup organic coconut flour
- 1/2 tsp baking soda
- generous pinch fine grain sea salt
- 1 and 1/2 cups organic frozen strawberries
Instructions
-
Preheat your oven to 350 degrees and line an 8 x 8" baking dish with parchment paper.
-
Prepare the strawberry jam first: In a small saucepan, combine the frozen berries and 1/2 tbsp maple syrup and cook over med/low heat, stirring occasionally to avoid burning, until the strawberries begin to break down. Mash the strawberries with a fork and continue to cook and simmer for about 10 minutes, stirring. Remove from heat and set aside.
-
In a large bowl, whisk the eggs and mix in the mashed bananas, cashew butter, and maple syrup until smooth and thick.
-
In a separate bowl, combine the coconut flour, baking soda, and salt.
-
Slowly add the dry ingredients to the wet and stir to fully combine. The batter will be thick due to the coconut flour.
-
Transfer the entire mixture to the parchment lined baking dish, scraping the bottom of the bowl. Spread the batter evenly over the dish, then spoon 1/2 cup of the strawberry mixture over the top, and use a toothpick to swirl it throughout the batter.
-
Bake in the preheated oven for 35-40 minutes, or until the top is lightly browned and a toothpick inserted near the center comes out clean (no batter)
-
Allow to cool completely, then cut into squares and enjoy!

I’m obsessed with the marbling on top!

I need to practice! I love that marbled look, now to do it with chocolate 🙂

These look SO good! The perfect way to use summer’s fresh strawberries and such a great breakfast for back to school season!

For back to school quick grab and go snacks are so important!

It’s cashew butter jelly time? 😆 These look so fab! And I’m SO curious about the texture seeing as they’re just made with coconut flour. The only success I’ve ever had with just using coconut is in mug cakes, and even then it’s a gamble. Also… banana + strawberry = heaven.
Michele says
I’ve gotten the hang of coconut flour in banana recipes and actually have been preferring it lately!

My favorite Paleo bakers (aka: Michele and others) have opened up the world of using cashew butters to make paleo goods REALLY good, and creamy cashew butter seems to be one of the best. I’m all for simple ingredients list; I would love to check out Nature’s Promise. These bars? I’m sure they are delicious! <3
Michele says
Cashew butter is the key to lots of creaminess without overwhelming flavor! Even my kids can’t pinpoint it.
Sofia Sanchez says
I made these today – they are delicious, and the best paleo bake I have tried so far in terms of texture and not being too eggy as I have found in some other paleo baking recipes. Thanks for the recipe! 🙂
Michele says
Awesome! So glad you enjoyed these and hope you try a few more recipes 🙂
Cindy says
Could you use honey instead of maple syrup? Has anyone tried this?
Michele says
Honey usually subs really well for maple and I sometimes use them interchangeably, so, yes I think it will be great!
maja says
Looks great! Can I use regular flour instead. I’m not gluten free. Thanks
Michele says
I’m sure it would be great but not sure of the exact amount to sub in.
Hamsa says
Can we use almond butter instead of cashew butter
yulia says
So, you know cashiews are not paleo. they are not nuts, they are legumes and full of lectins and antinutrients.
Michele says
Cashews are tree nuts and I’ve never seen them not considered Paleo. Peanuts might be the legumes you’re thinking about.
Jeanine Smith says
Are you able to use almond butter instead?
Michele says
Yes that works just fine 🙂
Tamara says
Have you tried throwing the strawberries and maple in with the other wet ingredients rather than making the jam? Thanks for a great looking recipe!
Michele says
Nope haven’t tried that
Jessica says
If I don’t have coconut flour is there another flour I could easily sub in?
Michele says
The measurements would be quite different so I’m not sure!
Kendra Bowe says
Very good!
Mariya says
Can I half the recipe? Will it turn equally good?
