How to Make This Sausage Apple Cornbread Skillet
Preheat your oven to 375°F, then heat a 9” ovenproof skillet over medium high heat and add the oil or ghee.
Add the sausage and cook about 5 minutes, stirring occasionally, until browned. Lower the heat to medium and add the onions, then cook another 3-4 minutes until soft and fragrant. Season with sea salt and black pepper, then remove from heat and set aside.
In a large mixing bowl, whisk together the eggs, milk, honey or maple syrup and ghee or butter. Add in the almond flour, baking powder and salt and mix well to form a batter.
Drain excess fat from the sausage skillet, then add the apples and cinnamon and stir to coat. Spread the cornbread batter over the top of the sausage apple mixture evenly. Bake in the preheated oven for 22-25 minutes or until the cornbread layer is set and turning golden brown on top.
Allow the skillet to cool for about 10 minutes before serving. For extra sweetness, drizzle on a little pure maple syrup.

I almost passed this recipe by because of “ cornbread”. I was surprised to read the recipe and find out the topping had no corn. I will definitely try this now, but I do think the title is very misleading.

I haven’t tried it, but it’s definitely delicious. You could also try something like a chorizo spicy sausage that could be a nice complement to the sweetness of the apple and corn. Rejoice!

This is so good! Easy to make. My hubby even liked it. He’s not very into paleo/whole30 meals. It’s a perfect balance between sweet and salty. I’ll take the rest for my breakfasts this week.
