These easy and delicious Paleo Salisbury Steak Meatballs are great for families, kid friendly, Whole30 compliant and perfect with mashed white or sweet potatoes! Gluten free, dairy free, sugar free, ready is 30 minutes.
Salisbury steak – it was dinner – the microwavable-TV-variety – at least twice per week for years of my childhood. And you know what?! I actually, secretly, loved it. TV dinner comfort food at its finest. Not joking. One bit.
You know what I didn’t love though? The fact that it was impossible to get those plastic covered mashed potatoes to come out any other way besides half frozen, half burn-your-tongue-off. Yes, I tried slitting the plastic (shudder.)
Yes, I tried stopping it not once, not twice, but THREE times to stir them with no real luck. That was called “recipe testing” back in 1992. Frozen mashed potatoes and the cherry dessert thing would be steaming for the next hour.
Anyway! Since my kids never had the pleasure of rocking their dinner, TV style, I didn’t even attempt to recreate the “official” salisbury steak of yesteryears.
The shape would scare them away, I’m certain. BUT! Something they really never turn down, is meatballs.
We make meatballs twice per week around here, so I like having more than one go-to recipe that I know will be a hit.
So here you go, children. You will be fed homemade Paleo salisbury steak – in meatball form! Frozen mashed potatoes optional.
Okay, you caught me, my potatoes were most definitely not frozen!
But, I did go the mashed potato route since it would’ve felt so wrong not to. I mashed mine up with coconut milk and ghee and they were perfect – if only I had known then what I know now…
But fast forward to 2017 and a whole lot has changed (for the better.) I had to make these salisbury steak meatballs one of those one-pan dinners that – you guessed it – is ready in 30 minutes, because – THIS IS LIFE, after all, and time doesn’t grow on trees.
But it does take time to grow trees, so I’m not sure if that helped me make my point. Point is, 30 minutes is often all we have on any given night to cook dinner.
Where were we? Salisbury steak meatballs, of course. Don’t be scared when you see the ingredient list – there are quite a few ingredients involved to get that signature salisbury steak flavor, but the method is simple. You mix the meatballs and roll them, brown them, remove from pan, then make the sauce.
The sauce/gravy really makes the meal, in my opinion.

Paleo Salisbury Steak Meatballs {Whole30}
Paleo Salisbury Steak Meatballs {Whole30}
Ingredients
For the Meatballs:
- 1.5 lbs grass-fed ground beef 85% lean
- 1 egg
- 1/3 cup blanched almond flour
- 3/4 tsp fine grain sea salt
- 1/4 tsp black pepper
- 2 tbsp tomato paste
- 2 tbsp brown mustard
- 1 tsp garlic powder
- 2 tsp onion powder
- 1 tbsp coconut aminos
- 1/4 tsp liquid smoke optional
- 1 cup white mushrooms divided SEE NOTE*
- 1/4 cup finely chopped mushroom from the 1 cup
- 1 Tbsp ghee or other cooking fat
- Parsley chopped, for garnish
For the Sauce:
- 12 ozbeef bone broth divided (1 cup + 1/2 cup)
- 1 Tbsp ghee
- 1 med onion chopped
- 3 cloves garlic chopped
- 1 tbsp arrowroot powder or tapioca
- 1 tsp mustard
- 2 tsp coconut aminos
- See NOTE*
Instructions
Make the meatballs:

In a large bowl, mix together with your hands the ground beef, almond flour, salt, pepper, garlic and onion powder, mustard, tomato paste, coconut aminos, finely chopped mushrooms*, egg, and liquid smoke,(if using.)

Form into 1.5 inch balls while preheating a large deep skillet over medium heat. Add 1 tbsp ghee to the skillet, then brown the meatballs all around. Transfer browned but not cooked through meatballs to foil lined sheet and lower the heat to low.
Make the sauce:

Add second tbsp ghee to the pan, then the onions and cook until translucent. Add the garlic and cook another minute.

Add 1 cup of the bone broth, leaving a half cup to mix with arrowroot

Add the mustard, aminos, sliced mushrooms* and bring to a simmer, stirring.

In a small bowl, whisk arrowroot with the remaining 1/2 cup of broth, add to the pan and stir to combine.

Add meatballs back to the pan with the sauce, cover and simmer on low for 5-10 minutes until meatballs are fully cooked and sauce thickens.

Spoon sauce over meatballs, sprinkle with parsley and serve with mashed potatoes. Enjoy!

The directions for sauce indicate that there is tomato paste in the sauce but I don’t see an amount listed in the sauce ingredients, just in the meat mixture list. Just wondering how much to add to sauce….
Thank you so much for catching that! I added that by accident in the direction and there isn’t any extra tomato space in the sauce – only the 2 tbsp in the meatballs themselves.
Oh my gosh! This recipe was so good! So often, I go to food blogs and try recipes only to be disappointed. But this was excellent. I’m glad I doubled the recipe for leftovers. My husband and teenage son loved it too. I’m definitely making this again. I could eat the gravy with a spoon!

Yes I think freezing would be fine, and I’d probably reheat covered in the oven, probably around 350-400 but not totally sure.

I’m very new to the paleo diet, but I didn’t think white potatoes were permitted. Can you clarify this?
Hi! White potatoes are in the “gray area” of Paleo, however they are permitted on the Whole30, which is a strict 30 day elimination diet with similar rules to a “strict” paleo diet. It really depends on your personal health, goals, etc. Here is a great article that discusses white potatoes and paleo: https://www.thepaleomom.com/potatoes-friend-foe-paleo/ – if you decide they’re not right for you, there are so many awesome alternatives including Japanese sweet potatoes, which have white flesh and are sort of a cross between a white and sweet potato.
Do you have a recipe for the potatoes?
For the meatball mixture, you state to use brown mustard. For the sauce, you just state mustard. Is it regular yellow mustard or would I use the brown mustard here as well? Planning to make these this week – they look amazing! This is my first time to your site and all the recipes so far look amazing 🙂
I used brown for both, that said you can use a yellow mustard too, just check ingredients for anything unusual 🙂
So, I am not a mustard expert, not a fan. I happen to have Dijon mustard in my pantry. Is that the same as brown mustard?
Dijon is fine unless you need to stick to Whole30 since most dijon is not compliant. Otherwise for flavor it won’t make a difference 🙂
Could I use something other than the almond flour? Maybe chickpea flour, tapioca flour, or coconut flour? Thanks!
In the meatballs, you can probably leave out the almond flour entirely and they will still come together and taste fine. Coconut is too dense and tapioca would alter the texture, I’m not sure about chickpea since I haven’t worked with it, but you could add a little bit and see how it goes if you like 🙂

I tried this tonight for dinner…it was delicious! However, my meatballs wouldn’t stay together. By the end of cooking, it was more of a ground beef mush…any tips to get the meatballs to stick together?
Hmm, I wonder if it was the beef itself, maybe too lean? I’d say 80-85% lean is ideal for meatballs. Or perhaps they stuck to the pan? Other than that, I’m not sure since I don’t think I’ve had that problem with meatballs. Glad you enjoyed it nonetheless!
Great recipe! It was a hit with the family! I didn’t have any mushrooms and not a big fan of brown mustard or liquid smoke so omitted those things and it still turned out great. Only thing is the sauce wasn’t as thick as I would have liked so will probably add just a touch more arrowroot powder next time, or less broth to mix it in. I served it with mashed potatoes (the sneaky kind w/ cauliflower mixed in).

I always buy extra lean ground beef…usually 96% if I can get my hands on it…will this still work? The fattiest meat I buy is 90% lean.
I think it probably will, my only concern would be the meat not sticking well enough since higher fat content helps with this.

Do you have a yummy mashed potato recipe that goes well with these?? I’m always so disappointed in my whole30 mashed potatoes!
I don’t have an official recipe, but what I typically do is mash them with ghee, coconut cream or milk, a bit of lemon juice and nutritional yeast to taste, plus salt and pepper. I find that these ingredients work really well to recreate the traditional flavor, and you can experiment with amounts (starting with less and adding) to suits your taste 🙂

I made these to take to some neighbors as part of a meal train. They were absolutely delicious! But now I have a confession: I’ve never made it as meatballs again. Yes, I’m lazy that way. So I just ground the beef and go from there then spoon the cooked mixture over sautéed zucchini and mix in half an avocado. One of my favorite meals. Thank you!

The almond flour or the coconut sauce made these have a chalky taste. My husband usually goes for seconds, and he barely ate 2 balls 🙁
I haven’t heard of them being chalky but I’m guessing the almond flour might have contributed depending on what brand was used? They aren’t all equal. The coconut aminos is just like soy sauce so I doubt that would make them chalky. Sorry they didn’t work out for you!
So..I am brand new to pale cooking and went to the store for this recipe today. Couldn’t find or didn’t have some of the ingredients. Thanks meatballs were awesome, stayed together perfectly but I tried to use coconut flour in place of the tapioca and coconut amino (don’t even know what that was and neither did my store clerk). Do NOT try this people. It made the gravy grainy and gross. Luckily I didn’t put the meatballs back in it so we salvaged dinner but I tried everything to fix the sauce…more broth, cooking longer, straining. Not sure if that is normal because I have never used different flour before….remember I am a newbie. I assumed i could make a roux with the coconut flour but possibky did it wrong…I think I will have many more trial and errors as I am not used to these ingredients.
Ah yes, so coconut flour is EXTREMELY absorbent and you would typically need less than half of the amount of almond flour, so for every one cup of almond flour it’s more like 6 Tbsp or so coconut flour. Also coconut aminos is just like soy sauce, so if you’re not following a strict paleo or whole30 diet you can always sub in soy sauce, GF if needed. I’ll link to the coconut aminos I use, which I buy from my local stores – either Shoprite or Stop & Shop. Typically store clerks don’t know every product, I’ve noticed coconut aminos is sometimes placed near the vinegar and sometimes in the organic section but almost never near soy sauce, strange. Okay, I know these are super quick BUT I was wondering if they could be done in the crockpot. Do you have any suggestions or so you think the crockpot wouldn’t work for this one? My husband and I LOVE your recipes, by the way! ???
The only time I’ve made meatballs in a crockpot was when there was a good deal of sauce along with them, I’m not sure these would work that way since there isn’t much sauce. For my other ones, I brown them a bit either by broiling or pan-frying and then cool in the sauce for about 3 hours on low. Glad you’re enjoying the recipes!

Very tasty; thanks!. I re-hydrated 1 generous tablespoonful of dried porcini mushrooms in 1/2 c hot water and added both water and porcini to my mushroom mix. I usually prefer baking my meatballs (400° 18-20 min) so I baked 1/2 and fried half. For me the baked balls hung together a bit more. Though we haven’t eaten dinner yet, my not-so-healthy eating husband tasted and gave his approval!

Sooooo delicious!! I’ve never made Salisbury steak before and I like this meatball version so you don’t have to have a huge patty. Even my son said to “add it to the list” of dinners. So yum!! I used two pounds of beef and I used coconut flour and it all turned out great.

You can simply omit them, there will be some flavor missing but I believe they’ll still taste good. You can sub in some dried chives to make up for the onion flavor 🙂
Ohmigoodness!!! This was so good. I accidentally used coconut flour and then panicked when I read comments about how badly it will turn out if you use that type of flour. If you use 100% grass feed beef, add an additional tbs of coconut aminos, and allow it to marinate for the day it will turn out perfect. I have really crazy nights with kids as a single mom, so I prepped this before work and put it in the fridge for the day. It was so easy to cook and serve to my palio and gf family. Thank you 🙂

Loved these! I normally bake my meatballs but frying definitely added to the sauce, because of the pan drippings. I used a lean ground sirloin,and it held up well! I did add a little fresh thyme in the sauce, cuz I had some in the fridge. I added a little garlic, parsnip and cauliflower florets to the potatoes while cooking to lower the carb count a little. My fam doesn’t care for coconut milk in mashed potatoes so I use chicken stock and ghee. It makes great light mashers!

They turned out powdery and without any flavor besides the almond flour taste
The gravy was pretty good and the mushrooms we’re good. Literally tossed 2 pounds of meat and made some quick hamburgers and put the sauce on top and it was infinitely better
This are great but took me over an hour and I am an experienced cook. Even so, I I’ll make them again.

Hi, I see the recipe makes six servings but for the nutrition information shown, how many meatballs is that, or is there a weight to go by? I know there can be a difference based on how big or small you make the meatballs but would love to have an idea of what the serving size is for the nutrition information.
Hi, unfortunately I usually eyeball this so I’m not sure how many meatballs, though you can divide the total number you make by the number of servings to get a good idea.

I have made these a couple of times and we love them (me + 3yo daughter). I have a busy week coming up in April and I’m on vacation now so I thought I’d make a double batch and freeze them raw. Can I do that? Or maybe not bc the meat was already frozen. So cool then reheat in oven I guess? I’ll make the sauce the night of.

I love this recipe! after mixing the meatball ingredients, I roll them into balls and place them on a cookie sheet to go in the over for about 15 min at 350F. this is the only way I can make them without breaking….and during that time I make everything else, then pull them out and put them in the sauce! thank you!

I have tried this recipe twice now with less than happy results. Meat didnt hold together into meatballs either time. I saw a comment about the fat content helping hold together, but not for me as I have tried lean and 85% meat. We ate the sauce it became both times, but I won’t try the meatballs again. I loved TV dinners, especially salsbury steak, when i was a kid!
I doubled this recipe as I have two teen bots. These tasted pretty good but a lot of my meatballs fell apart. Too much flour or too much egg? Any suggestions? I’d like to try again and see if I have better results.

Everyone in the family loved this. Though the meatballs fell apart, so it came out the consistency of a spaghetti sauce with big chunks of ground meat.
Whole30 is not easy. This recipe is one of the best we found. Using the sauce for baked steak as well as the delicious meatballs. It’s a keeper!

This has become a family favorite! When I make this, I have to be sure to make a double batch or everyone gets upset that there’s no leftovers!
While there is a long list of ingredients, these are super simple to make. I think this recipe includes all the staples that you probably have in your pantry.
I ended up using more mushrooms (we just love them) and we only had 1.25 lbs of ground meat. This still makes plenty!! Prepare for leftovers if there are only two of you.

It was tasty and moist but way longer than they say it takes to make.
It states Prep time: 10 min- by the time you chop up the Onion, Garlic and mushrooms then measure it all that’s your 10 minutes. cook time could be 20 min but the whole putting this recipe together made me so tired I wasn’t hungry when it was done.
I made this gravy as written, but I doubled it because I knew it was going to be good! And it was so good! Instead of making meatballs I did it with cube steaks with salt and pepper. Just cooked them in ghee after browning the mushrooms and onions. I think it added even more amazing flavor! This is a total keeper! Thank you so much!
These meatballs came out amazing! I’m just starting Whole30 and I was excited to try out some new products! I used arrowhead mills tapioca flour (from cassava root) to bind the meatballs and thicken the sauce. So good! And I’m in love with coconut aminos. Thank you @michelerosen

Just made this tonight. This is a keeper. Subbed beef broth with chicken broth, brown mustard with stone ground mustard. I upped my chicken broth and coconut aminos for more sauce. I didnt add mushrooms on the meatballs but just on the sauce since my daughter doesn’t like it on the meatballs. Thank you!

I had to make myself stop eating it!! I omitted the mushrooms and it was still absolutely delicious!!
