These paleo chicken salad wraps start with the best easy chicken salad layered with avocado, lettuce and tomato and wrapped in oversized grain free tortillas! These are a great make ahead lunch and perfect for easy dinners too. Gluten free, dairy free and paleo friendly.
Back when I started paleo (and even up to maybe a year ago!) I thought sandwiches and wraps were a thing of the past.
But now, they’re back! I don’t know about all of you, but I’ve been loving the range of grain free “bread” products that are more widely available in stores now.
If you’ve tried my paleo enchiladas, then you’re probably already a huge fan of the cassava tortillas from Siete Foods.
I decided to try out their extra large burrito size tortillas to make these chicken salad wraps and BOY did they come through!
Yes, you DO need to follow the directions on the back of the package to heat them just right, making them pliable enough to wrap well.
Don’t worry, they stay pliable even after they’ve cooled down which is amazing!

What You Need to Make These Easy Paleo Chicken Salad Wraps
Chicken Salad:
- Chopped or shredded cooked chicken (I used a rotisserie chicken)
- nitrate free bacon
- scallions
- homemade mayo, or store bought avocado oil mayo
- dijon mustard
- onion powder
- garlic powder
- Sea salt and freshly ground black pepper
Wraps:
- grain free tortillas – I used Siete Foods Burrito size tortillas
- Romaine or iceberg lettuce (or preferred greens)
- cherry tomatoes
- red onion
- avocado
How to Make These Chicken Salad Wraps
In a large bowl, combine the cooked chicken, crumbled bacon, scallions, mayo, mustard and garlic and onion powder.
Taste, then add sea salt and black pepper and adjust to preference.
I recommend heating the tortillas exactly as directed on the package to make them perfectly pliable for wrapping.
Lay out a tortilla and place a couple of lettuce leaves in the center, then onions, tomatoes, and sliced avocado.
Layer a scoop of chicken salad on top, then fold the bottom of the tortilla up and the top down, rotate it and roll it up tightly.
Repeat the process to make 6 or more wraps, depending on what size tortillas you use. To serve, use a large, sharp knife cut each one in half.
How to Make Easy Oven Bacon
If I’m cooking more than a few slices of bacon (which is always!) I use my oven for easy cleanup and no-fuss. No splatter burns either 😉
It’s super simple. Arrange your bacon slices in a single layer on a parchment lined baking sheet.
Bake at 400°F for 16-20 minutes, or until crispy. Depending on the thickness of your bacon and if there’s any sugar in it, the time will vary.
I like to check it right around 16 minutes and then every minute after.
Drain on paper towels before crumbling.
