A tangy sweet maple mustard sauce gives this crispy-skin grilled salmon extra flavor and goes so well over a big summer salad or with a side of cauliflower rice or roasted veggies. It’s paleo with a Whole30 friendly option.
When I first started eating paleo, I ate crispy-skinned salmon every. single. day. Not kidding! I made a big salad with some sort of homemade vinaigrette, seasoned my salmon and cooked it in a little avocado oil to get the skin nice and crispy.
Although I eventually moved on to other lunch options, I sometimes miss those days, and the salmon! And, even though times have changed, I still love salmon with that perfectly crisped-up skin. Today, we’re making it with a sweet tangy maple mustard sauce that you’ll go wild for.
When I cook salmon and I want the skin really crispy, I always season it first, then either pan fry or grill before adding the sauce. You get all the flavor of the glaze or sauce without sacrificing the crispy skin! The salmon itself turns out perfectly flaky, too.

For the sauce, even though the original version uses maple syrup to sweeten, you can also make it Whole30 compliant by using dates to sweeten it instead without sacrificing flavor.
For the Whole30 version you’ll make date paste – 1/2 cup packed, pitted medjool dates, softened + 3 Tbsp water, pureed in a high speed blender or small food processor.
I absolutely love this salmon over a “slaw” type salad with cauliflower rice, but you can really serve it with anything you want. Zucchini noodles, roasted or grilled potatoes or veggies, or over a simple green salad are all tasty options.

Maple Mustard Grilled Salmon {Paleo}
Ingredients
Sauce:
- 3 Tbsp pure maple syrup *see note for Whole30 compliant sub
- 1/4 cup stone ground mustard
- 1 Tbsp fresh lemon juice
- 3 Tbsp avocado oil
- Sea salt and black pepper to taste
Salmon:
- 4 individual salmon fillets 5 oz each, 1” thick
- Avocado oil for brushing
- 1/2 tsp Sea salt
- 1/4 tsp black pepper
- 1 tsp grated lemon zest
- 1 tsp garlic powder
- minced fresh herbs for garnish
Instructions

For the maple mustard sauce, place all ingredients in a tall container and use an immersion blender to blend to a smooth consistency. Alternatively, you can whisk together all ingredients except for the oil in a bowl, then stream in the oil while whisking constantly to incorporate. Once done, set aside while you prepare the salmon.

Rinse the salmon fillets and pat dry with paper towel. Drizzle or brush oil all over both sides, skin included. Combine your seasonings and sprinkle all over the salmon.

Heat your grill or grill pan to medium high heat. You can spray with avocado oil spray as an extra step to prevent sticking. Once heated, place the salmon skin side down on the grill and cook 3-4 minutes, adjusting heat if necessary. Use tongs to carefully flip the fillets without separating the skin. Cook on the second side another 3-4 minutes, or until the salmon flakes with a fork.

Remove salmon to a serving plate and drizzle all over with the maple mustard sauce right away. Garnish with extra black pepper and fresh herbs if desired. This is great served alongside cauliflower rice and over a salad. Enjoy!
Recipe Notes
*For a Whole30 version, use 1/2 cup packed pitted medjool dates, softened + 3 Tbsp water, and blend in a food processor. Use this in place of the maple syrup.
