A dip that’s basically a full meal is game day heaven, in my opinion, and that’s exactly what we have here with this paleo chicken taco dip! I know I say this a lot, but this dip REALLY gives you all the good stuff.
Can you say guacamole layered with taco-seasoned chicken, chipotle ranch sauce, salsa, shredded veggies and jalapeños? Forget the cheese, the creaminess and flavor of this dip is out of this world. Trust me, it’ll be love at first dip 🙂
Maybe the best part of this recipe is how quick and easy it is (as long as you have your chicken cooked ahead of time.). It’s all prep and no-cook!
We start with an easy guacamole, followed by shredded chicken tossed in a spicy taco-seasoned sauce. Then we have my favorite chipotle ranch sauce, which has tons of flavor and is incredible all on its own.
Top that with your favorite salsa, shredded brussels sprouts (or lettuce, or cabbage) and sliced jalapeños for extra spice.
I decided to go with shredded brussels sprouts since I’m totally Brussels-obsessed but any shredded veggie would work really well to top of this dip. It’s ready and waiting for your favorite fresh cut veggies, baked fries, or tostones!
From start to finish, the prep is about 20 minutes since each component (or layer) of the dip is easily mixed together.
The combination of the spicy shredded chicken, creamy guacamole, flavor-packed ranch and salsa plus the veggies on top make this dip satisfy all your cravings at once! It’s filling enough that you could really eat it all on it’s own and make it a full meal, which I definitely did after shooting these photos.
If you serve it with fresh veggies, this loaded paleo chicken taco dip is also keto friendly and Whole30 compliant. It’s quite the epic appetizer but can really be made anytime you want something tasty, fun, spicy, and filling!

Loaded Chicken Taco Dip {Paleo, Whole30, Keto}
Ingredients
Chicken:
- 2 cups chicken breasts cooked and shredded
- 1/4 cup avocado oil or light olive oil
- 1/2 tsp sea salt
- Juice of 2 small limes about 1 1/2 tbsp
- 2 tsp chili powder
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp chipotle powder
- 1/2 tsp cumin
Guacamole:
Chipotle ranch:
- 1 cup homemade mayo
- 2 tsp fresh lime juice or lemon juice
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp dried chives
- 1/2 tsp chipotle powder
- 1/2 tsp paprika
Additional Ingredients:
- 1/2 cup salsa compliant
- 1/3 cup Shredded Brussels Sprouts Or lettuce, or cabbage
- 2-3 Jalapeño peppers thinly sliced
- Additional cilantro for garnish, if desired
Instructions

To prepare the chicken, whisk together the oil, salt, line juice and spices in a bowl until fully combined, then toss with the shredded chicken.

Prepare guacamole by mashing all ingredients together. For the chipotle ranch, whisk together all ingredients in a small bowl.

Assemble the dip: In an 8 x 8 dish (or comparably sized dish/container) layer the guac, chicken, chipotle ranch, salsa, shredded Brussels sprouts, jalapeno, and any additional cilantro.

Serve immediately with fresh cut veggies, sweet potato fries or tostones. Store leftovers in an airtight container in the refrigerator for up to 3 days. Enjoy!

Made this for superbowl Sunday. Very good. I found it needed more chicken (but we were using this as dinner rather than as a side) and I replaced the avocado oil in the chicken with bone broth (with the quac and the mayo it just seemed oil/fat overkill). I used more than 1/2 cup of salsa – more like 3/4 and used a lot more shredded lettuce. I also mixed chopped super fine spinach with the salsa to get up veggies and you can’t taste it. Served with carrots, cucumber and celery (cucumber was awesome with it). Tried it with the lime Siete chips, much preferred the veggies. Excellent recipe.
Next time I might try Kite Hill’s Cream Cheese instead of the mayo (but use all the spices) and there will be next time! This was great!

I love this dip so much! I sometimes skip dipping anything into it and just eat it by itself, it’s THAT good. Question though, how do you get your chipotle mayo to a thicker consistency? In your photo, it looks like the consistency of hummus, but mine comes out more like a sauce. I use your mayo recipe as a base (also amazing, fyi).

If it won’t thicken – it needs more fat. I find it thickens more consistently with the avocado oil.

Really good! I used a rotisserie chicken and prepared pico, guacamole and ranch so this was very easy and quick to put together. I loved the seasoning for the chicken and the oil made for a nice “dressing” for the shredded lettuce. I served with Trader Joe’s Grain Free Cassava Tortilla Chips (paleo) and Kroger brand Sweet Potato Tortilla Chips for those not eating paleo. Delicious, fun and I’ll make it again!
