These honey BBQ chicken skewers are one of my kids’ favorite meals! Tender, juice flavorful chicken in a sweet tangy BBQ sauce with peppers and onions. Great all summer or year round on an indoor grill. Paleo friendly, clean ingredients.
I’m so excited about these chicken skewers! Because they’re easy, so tasty PLUS one of my kids said they’re the best thing I’ve ever cooked.
I think summer just makes them a little bit nicer to me.
But, these ARE great, and really easy.
The marinade is split and part of it becomes a sauce.
I used a paleo friendly BBQ sauce, which are much easier to find in stores lately.
The one from Primal Kitchen is totally unsweetened, which is a great base because we’re adding honey to it!
Let’s get into more of the recipe details.
What You Need to Make These BBQ Chicken Skewers
This recipe is very simple and doesn’t require too many ingredients.
Here’s everything you’ll need to prepare the chicken skewers:
- olive oil
- paleo friendly BBQ sauce (unsweetened or date sweetened)
- raw honey
- coconut aminos
- stone ground mustard
- minced garlic
- sea salt and black pepper
- boneless, skinless chicken breasts
- red bell pepper
- yellow onion
- wooden or metal skewers
- chopped fresh herbs of your choice, optional
How to Make These Honey BBQ Chicken Kabobs/Skewers
First, mix together the sauce ingredients in a large bowl. Pour 1/2 cup of it into a measuring cup and set aside in the refrigerator, covered. The remaining amount will be the marinade for the chicken.
Cut the chicken into 1” chunks. Add the chicken to the marinade bowl and toss to coat. You can also do this in a large ziplock bag. Cover and refrigerate for at least 2 hours or up to overnight.
Heat your grill to medium high heat. While the grill preheats, thread the chicken onto skewers alternating with the peppers and onions. There should be some space in between pieces to cook thoroughly and evenly.
Get the reserved sauce ready for basting and place the skewers on the hot grill. After the outside of the chicken is seared, brush generously with the remaining sauce.
Once the chicken has just cooked through, remove to a platter and serve with any remaining sauce and fresh herbs, if desired.
Tips for Making Kabobs/Skewers
In the past I didn’t love kabobs because it seemed like they never cooked quite evenly!
Luckily there is a tip I found that works well to get the chicken and veggies cooked just right.
The tip is to cut the chicken chunks slightly larger than the pepper and onion pieces so the chicken has contact with the grill at all times.
Since the veggies don’t take as long to cook, they don’t need constant contact with the grill the way the chicken does to get that nice sear and juicy inside!
My other tip is only for wooden skewers. Before grilling, if using wooden skewers, soak them in water for about 10 minutes to avoid burning. Works like a charm!
I hope you’re ready for a delicious healthy BBQ treat! Let me know if your family loves them as much as mine does 🙂 Happy grilling!
