If there’s one thing, food-prep wise, that I am actually on top of on a regular basis, it’s making sure I have lots of “patties” ready to go during the week.
Whether they’re burger patties for, easy breakfast sausage, or chicken sausage patties, cooking a good breakfast, lunch, or even a quick dinner is made SO much easier when the meat is ready to go, right? Now if I can start roasting and baking sweet potatoes ahead of time, then I’ll consider myself a “real food-prepper” – but – not quite there yet!
Don’t worry, I’ll let you know when I am. But for now, I wanted to share this insanely easy recipe for Mushroom Spinach Homemade Sausage Patties! I won’t even put these in a particular meal category, because last week I ate them for all three meals – mixed with eggs for breakfast, with potatoes and salad for lunch, and even for an on-the-go dinner when I had to take Emily to gymnastics. Since I precooked them the first day, all I did was heat and eat with whatever else I felt like, and viola! Savory crave worthy Paleo and Whole30 meals in minutes.
What makes this recipe for homemade sausage extra special can be explained in the picture above – cremini mushrooms! For these sausage patties, I used a special “blend” technique by roasting and finely chopping the mushrooms before blending them seamlessly into the patties to create an even more delicious, nutritious and sustainable final product.
The mushrooms complement and enhance the flavor of the meat while adding a serving of veggies and nutrients such as Vitamin D, B Vitamins, antioxidants and potassium. Adding mushrooms to the meat also helps you do more for your dollar, since all the high quality meat we purchase and consume when eating Whole30 and Paleo inspired meals can easily add up. Since I’m a lover of greens, I decided to chop up some spinach for these sausage patties as well, and really loved the result. After making this recipe, I think chopped veggies will be a regular part of my patties from now on – so easy and tons of great flavor! Now, let’s get to the recipe!

Mushroom Spinach Homemade Sausage Patties {Paleo & Whole30}
Ingredients
- 1 pound organic ground pork or your favorite ground meat
- Cremini Mushrooms about 2 cups whole (3/4 cup finely chopped and roasted*)
- 1/2 tsp olive oil for roasting mushrooms
- Handful of fresh spinach very finely chopped
- 1/2 tsp fine grain sea salt
- 1/2 tsp onion powder
- 1/4 tsp garlic powder**
- 1/8-1/4 tsp crushed red pepper depending on level of spice preferred
- 1/2 tsp fennel seeds
- 1 tsp Italian seasoning blend
- 1-2 tsp olive oil or other cooking fat for frying the patties
Instructions

First, roast your mushrooms whole:

Preheat your oven to 400 degrees. Toss the mushrooms with the 1/2 tsp olive oil and spread out evenly on a foil lined baking sheet, then roast for about 10-15 minutes until softened and fragrant. Allow to cool prior to chopping.

Once mushrooms have cooled enough, chop them to a fine consistency similar to that of your ground meat.

In a large bowl, combine the ground pork, roasted chopped mushrooms, chopped spinach, salt, and all the spices and mix well.

Form the mixture into about 10 small patties. Heat a large heavy skillet to med/med-hi heat and add your cooking fat to ensure the patties won't stick while cooking.

Cook the patties (in batches if you need to) 3-4 minutes on each side, or until cooked through with a golden brown exterior. You can either serve right away, or allow to cool and then freeze for later use. Enjoy!

I try to add vegetables to things for my son to get him to eat them lol. I really like mushrooms, so good when roasted or sautéed. If I ever get around to making my veggie burgers, I should add them

Definitely a good one to add to burgers, meat or veggie! Way back when I experimented with portobello burgers and they’re so good with balsamic.

Oh wow, I’ve never thought of making patties w/ these kind of ingredients before. Usually I just do the whole meat & herbs thing, but this one surprised me. I actually just started learning about paleo recipes from this book http://eatwellsimple.com/paleo-grubs-book-review/ and although it’s got a ton of cool recipes I’ve been messing around with… I’ll think i’ll be trying these patties tonight 🙂

I don’t – I’ve been getting more and more requests though for nutrition info so might be including it soon at least for posts going forward. Since these have minimal ingredients I think an online nutrition calculator should be pretty accurate for it though.
