Easy Homemade Chicken Sausage Patties with Spinach and Caramelized Onions that you can make ahead of time and serve with any meal! They’re made with real, whole ingredients and are sugar free, Paleo and Whole30 compliant.
I absolutely just can’t get enough homemade sausage of all sorts. And when I say sausage, I suppose I’m really just talking about deliciously flavored, easy, homemade “patties” of all kinds.
I find that the homemade versions are so much yummier than anything store bought, they taste fresher, and even though I love my Aidell’s chicken apple when I’m in a hurry, when I actually meal prep, I MAKE SURE I have the homemade variety in the freezer!
We’re on Whole30 day 2 as I’m writing this, and day 1 was a total success – even if I did cook quite nearly literally the entire day – it felt good to get back to eating bigger, satisfying meals with lots of veggies. Everything cooked “from scratch” feels really good after traveling for the better part of the second half of December.
Please help restrain me if I happen to be presented with a grilled chicken salad (that is mostly lettuce) and a side of balsamic vinaigrette anytime in the foreseeable future. I will be pretty pissed off to say the least – you traveling Paleo-ers probably know what I’m saying.
On the topic of eating and traveling, I might be slightly exaggerating with reference the plain grilled chicken salad, but not by much. I typically drop most of the Paleo “rules” when I travel aside from GLUTEN FREE, which is my number one priority. I also don’t touch those deep fried french fries that seem to show up everywhere no matter what you order. Even if they’re claimed to be GF, the sight of the oil alone seems to make my stomach cramp up. I can’t be the only one, right?
And so, after lots of corn tortilla chips with guac, cheddar cheese, and GF pretzels to keep me from starving without my beloved sweet potatoes, I’m happy to be home with my coconut oil, ghee, plantains, eggs, and ground meat. Oh, and my favorite Whole30 compliant bacon – nothing says we are back in Kansas (or, NJ in my case) like a freezer stocked with my favorite bacon from U.S. Wellness Meats!
But why are we talking bacon right now? This recipe involves none of it, after all – but don’t get sad because it’s crazy delicious anyway. And why? Because it DOES involve a couple of my other favorite things – caramelized onions and spinach! I think caramelized onions are the “bacon” of the veggie kingdom, what do you think?
Those of you who read often will not be surprised to see I included caramelized onions in these homemade chicken sausage patties. And new folks – jump on board the caramelized onion train and thank me some other time – though slow to cook, they add incredible flavor to almost any savory recipe so I never resist. Heart’s desire = sausage and caramelized onions. Period.
Speaking of my heart’s desire (why is this post Wizard of Oz themed?!) – I almost always eat homemade sausage with eggs – regardless of the time of day. There’s just something about crispy fried eggs that complement meat and veggies so perfectly! To get them all crispy on the bottom with the white cooked through, I fry them over medium heat in coconut oil, then cover the pan at the end and lower the heat. Perfect every time, unless I’m not paying attention (oh yes that happens!)

Homemade Chicken Sausage with Spinach and Onions {Whole30}
Ingredients
- 1 small/medium onion cut in quartered and then sliced thin
- Large handful fresh spinach chopped
- 1/4 cup coconut oil or ghee
- Large pinch salt
- 1 lb ground chicken --My go-to from U.S. Wellness Meats
- 2 tsp ground poultry seasoning
- 1/2 tsp crushed fennel seeds
- Dash red pepper flakes
- 1/8 tsp allspice
- 1/4 nutmeg
- black pepper and sea salt to taste
Instructions
First, Caramelized the onions:

Heat a medium skillet over low heat and add the coconut oil or ghee. Add the onions to the pan and stir to coat, sprinkle with salt.

Continue to cook over med/low heat, stirring, about 15 minutes to caramelize.

Add in spinach to the caramelized onions and toss to coat, remove from heat.
Now, form the patties:

Allow the onion/spinach mixture to cool for a few minutes, then mix with ground chicken and all the spices.

Form into 10 patties*, then either fry for 3-4 minutes per side over medium heat, or bake for 15 minutes at 425 degrees F, turning once**

Serve with hash browns and eggs (or whatever you want!) and enjoy!
Recipe Notes
*At this point you can freeze the patties to cook at a later point if you choose.
**The cooked patties can be stored in the refrigerator for up to 4 days if you want to cook them ahead of time.

You know you can make big batches of caramelized onions in a CrockPot just to have on hand. It’s heaven.
Also I will eat all your deep fried potatoes, and I’m pretending there’s champagne in your OJ glass as well. 🙂

These look so delicious. I feel like I’ve mastered the fried egg – I do it the same exact way you describe. What I haven’t mastered yet is cooking in cast iron. Everything sticks. Would you do a blog post on cooking with cast iron 101?

I have one cast iron that’s getting sticky but it’s because I’ve been lazy about re-seasoning! I’ve had the best success when I do mini-seasons after each use – scrub and dry the skillet, coat with coconut oil and heat over med heat until it just starts to smoke. I use each of mine at least once a day (sometimes twice or three times) and they’ve held up really well and actually become more non-stick with time, especially when I’m cooking a lot of bacon!

You mix the raw ground chicken with the onion spinach mixture, then form into patties and pan fry 🙂

Hi! I can see the nutritionals but am not sure what a serving size is? Are you considering one patty as a serving or is it two pattys as your photos suggest?

The nutrition is based on the recipe making about 4 servings, so if you make 8 patties it would be 2, if you make 10 as described in the recipe it’s a bit more than 2 though.
