I’m a total ex-cauliflower hater, amazing isn’t it?! It took me SO long to embrace the idea of cauliflower rice, and, admittedly, I’m still super picky about it.
After discovering that fried cauliflower rice can be legitimately tasty though, especially with a whole lot of your favorite (paleo) goodies mixed in, I was completely hooked.
From fried rice with chicken and bacon, to this Mexican spin, and now to this tasty Hawaiian Cauliflower Fried Rice, the lesson learned is clear – cauli rice (although not actually rice) can be incredible in its own right.
I’d been thinking if creating a Whole30 Hawaiian fried rice for quite awhile but wondered if others would be as into the idea as I am.
And then I realized – as usual – that I have to sometimes go with my own cravings to create delicious recipes. Yes, at first it sounds a bit strange – ham and pineapple in cauliflower rice? But let me tell you, this WORKS!
You can tons of flavor, both sweet and savory and it’s also filling (in a good way!) since you’re packing in veggies, fruit, and protein.
The day I made this recipe I had my older daughter home. Now, I admit she’s my “paleo” kid, but still, she has her limits, especially when it comes to things like veggies replacing tried and true carbs (like rice or pasta!)
Anyway, just based on how delicious this fried rice smelled while cooking, she asked to have some. She loved it! She wound up eating leftovers not only later that day (see, this is what we snack on!) but the following day for lunch as well.
These are the ultimate recipes tests in my opinion – if kids come back the next day – we good!
One note about the ham – it can definitely be hard to find sugar-free ham, as you might have noticed if you’ve done the Whole30 recently (or ever).
For this recipe I used Jones Dairy Farm sugar-free ham steaks (I’m linking to their site, however, this post is not sponsored). The ham steaks happen to be great since you can chop them into the perfect stir-fry size for this rice!
This being said, if you’re having trouble finding no-sugar ham, feel free to sub in another meat of choice. For example, cooked chicken or pork would be great here!
A note on the pineapple as well. I used fresh chopped pineapple here, but you can also buy the canned juice-only pineapple tidbits if pineapple isn’t in season and it will still be Whole30 compliant! You won’t be altering the flavor at all either, so do what works for you.

Hawaiian Fried Cauliflower Rice {Paleo, Whole30}
This Hawaiian Cauliflower Fried Rice is packed with goodies and so simple to make! Chopped pineapples and sugar-free ham, peppers, onions and scrambled eggs make this "rice" a meal that you'll crave for busy weeknights. It's also kid approved, low in carbs and Whole30 compliant!
Ingredients
- 12 oz cauliflower rice (I purchased mine pre-"riced")
- 2 eggs whisked
- 2 Tbsp coconut oil divided
- 2 cups ham sugar free for Whole30, chopped
- 1 small onion diced
- 1 small bell pepper diced
- 1 jalapeno pepper diced
- 2 cloves garlic minced
- 1 1/2 cups pineapple diced*
- 1/4 cup coconut aminos
- 1/2 tsp ground ginger
- 1/8 tsp chipotle powder or more, for spice
- 3/4 tsp smoked paprika
- 1 bunch greens onions thinly sliced, green parts only
Instructions

Have all your ingredients prepped and ready to go before beginning.

Heat a large nonstick skillet or wok over medium heat and add the coconut oil. Add the bell pepper, onion, and ham and cook about 2 minutes, stirring.

Move the mixture over to one side of the skillet and add the whisked eggs to the other side, working quickly to scramble. Break eggs into pieces and combine with the veggies and ham, stir, then add in the jalapeno, garlic, and pineapple. Cook another minute or so to soften, then remove from heat.

Transfer mixture to a large bowl while you make the cauliflower. Return the skillet to medium heat and add more coconut oil if needed. Add all the cauliflower rice and stir while cooking for 2-3 minutes, or until softened to preference.

Return the veggie/ham mixture to the skillet, add the coconut aminos and spices and stir to combine flavors. Remove from heat and sprinkle with the sliced green onions, serve right away and enjoy! Store leftovers tightly covered in the refrigerator for up to 4 days.
