These garlic butter steak bites and potatoes are made all in one skillet and ready in 25 minutes! Packed with loads of garlic and buttery flavor (from ghee) plus fresh herbs, it’s an easy dinner you’ll want on repeat in your house.
For those times when you’re just craving meat and potatoes with lots of flavor, this is your meal!
It’s ready in 30 minutes, made in one skillet on the stovetop and has so much flavor from fresh garlic and herbs.
Oh, and plenty of ghee of course! For that extra buttery flavor. I seriously could not get enough of this meal, and neither could the other steak lovers in my family!
What You Need to Make Whole30 Garlic Butter Steak Bites and Potatoes
Since the meal itself is simple, the ingredients are as well. The fresh herbs, garlic, ghee and salt and pepper give you so much flavor!
Here’s everything you’ll need to prepare the steak and potatoes:
- small gold potatoes
- ghee
- fresh garlic
- fresh rosemary, minced
- parsley, minced, plus more for garnish
- sirloin steak
- Sea salt and black pepper
How to Make These Garlic Butter Steak Bites with Potatoes
To soften the potatoes before cooking on the stovetop, place them in a microwave safe bowl with about 1/4 cup of water and microwave on high for 5-6 minutes or until barely fork tender.
Heat a large heavy skillet over medium high heat and add 2 tablespoons of the ghee. Once hot, add the potatoes and sprinkle all over with sea salt and pepper. Cook about 2 minutes, stir, then cook another 4 minutes, stirring occasionally to evenly brown, until golden brown and tender.
During the last minute of cooking the potatoes, push them to the size and add the garlic, rosemary and parsley. Stir and cook Once done, remove the potatoes, garlic and herbs to a bowl and cover with foil to keep warm.
Add the remaining 2 tablespoons of ghee. You might need to cook the steak in batches to avoid overcrowding depending on the size of your skillet. Add the steak cubes to the skillet and season well with salt and pepper. Cook over med-high to high heat undisturbed for about 2 minutes, then stir and continue to cook until nicely browned, about 2 more minutes.
Toss the steak with the potatoes and garlic herb butter and top with additional fresh parsley, then serve right away.
Can I Sub in a Different Type of Steak for the Sirloin?
I love sirloin but it’s not the only cut you can use for this recipe.
To make sure the steak is tender, I recommend using tenderloin, ribeye, or strip steak and making sure to slice against the grain when cubing the steak.
Can I Sub in Sweet Potatoes for the Potatoes?
You can sub in different potatoes for the gold potatoes, such as orange or white sweet potatoes, russet potatoes or baby red potatoes.
The key is to make sure they’re cut into uniform size and just fork tender before adding them to the skillet (after the microwave step.) Sweet potatoes may be more likely to burn in the skillet, so make sure to adjust the heat and stir often to avoid burning.
Tips for Keeping the Steak Tender
In addition to choosing the right cut of steak and slicing it against the grain, there are a few tricks to keeping the steak tender.
First, make sure the skillet and ghee are hot enough to give the steak a good sear before adding it.
Once you add it (in a single layer) allow it to cook without stirring for a good 2 minutes. These two steps will give your steak a nice crust on the outside while keeping the inside tender.
Lastly, do not overcook the steak. Sometimes your steak cubes might not be even in size which means some will overcook. Try to cut uniformly sized cubes to avoid this.
After the initial 2 minute sear, the steak will most likely only need another minute or two to cook. Steak is safe at an internal temperature of 145° F.
What To Serve with Garlic Butter Steak Bites and Potatoes
A simple green salad with a balsamic or garlic vinaigrette would be great with these steak and potatoes.
If you have extra time, crispy roasted brussels sprouts or broccoli (or broccolini) would be amazing as well! I know you’re going to love this meal!

- 1 1/4 pounds small gold potatoes quartered (about 1/2” thick)

mom of 7: i just researched and the equivalent of microwaving for 6-8 mins is boiling for approx 12 mins. i would say test them around 10 mins for the same consistency Michele states above.

Boil or steam the potatoes until just barely fork tender. Check along with way with a fork to get the timing right since it will vary based on how thick they’re cut.
