Soft, moist, and totally fun to eat, these Easy Paleo Chocolate Chip Muffins are also nut free and very kid friendly! Have them on hand for a quick snack, breakfast, or put them in lunch boxes. These addicting and healthy muffins are gluten free, grain free, dairy free, soy and nut free.
I’ll start the recipe off with a quote from my daughter, who helped make these: “They taste like chocolate chip pancakes that mommy makes.”
I had to share, because clearly she’s caught on to the unique flavor of paleo “cakes” and other baked goods!
Could it be the coconut flour? Possibly…but all I know is that these muffins were gone within 6 hours of making them, and more were requested the next morning.
Plus, my daughter was right in that if you choose to, you can use the batter to make pancakes! All credit on the pancakes has to go to her.
The reason you have to make these, other than because I said so is that they are just really too easy and quick to have a valid excuse for avoiding them. You won’t be sorry, I promise.
Well, you won’t be sorry as long as you grease the muffin cups enough, as I did not.
I guess in addition to new pans, I’m also in need of a new muffin tin, which I’ll almost certainly avoid buying for another year since I have strange lazy ways with cookware. * Updated – using parchment liners eliminates the sticking issue!
At least I’m not as bad as my husband, who actually purchases new running shoes since his old ones have HOLES in them, and then doesn’t wear them for 3 more months and even that’s a result of me harassing him about it.
He won’t put on the new shoes until the old ones literally fall apart at the seams and won’t stay on his feet. Change is hard sometimes I suppose.
Easy Paleo Chocolate Chip Muffins {Nut Free}
Easy Chocolate Chips Muffins - Grain, Dairy, and Nut Free
Ingredients
- 4 eggs room temp
- 2/3 cup full fat coconut milk room temp
- 1/3 cup organic coconut oil refined, melted and cooled to nearly room temp
- 4-6 Tbsp pure maple syrup depending on how sweet you want them
- 2 tsp pure vanilla
- 1/2 cup organic coconut flour
- 1/4 cup tapioca flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2/3 cup dark chocolate chips Or Enjoy Life brand mini chocolate chips
Instructions

Preheat oven to 350 degrees and line a muffin pan with parchment liners.

In a large bowl, combine the eggs, coconut milk, coconut oil, maple syrup and vanilla, mix until very smooth

In a separate bowl, combine the coconut flour, tapioca flour, baking powder, baking soda, and salt.

Stirring constantly, gradually pour the dry mixture into the wet and mix until smooth. Expect the batter to be thick due to the coconut flour

Lastly, stir in the chocolate chips. Fill the greased muffin cups 2/3-3/4 full, spooning it in and smoothing it since it's thick. Bake in the preheated oven for about 20 minutes, or until set and lightly browned.

Remove from oven and let cool for 5 minutes before removing from muffin tin and cooling on a wire rack. Enjoy!

My issue with Enjoy Life chips are the price. I don’t consume much dairy at all but I try to ignore the dairy in the semi-sweet and dark chocolate chips just because I don’t want to pay an extra three dollars per bag unless I have to lol.

I actually found mine on sale for 4.99, which is still pricey but the best I’ve found! I don’t use them a lot, so, unless my husband eats the whole bag they stick around for a while! But if you don’t have an issue with dairy I guess they’re pointless.

Making these today. They look awesome and muffins are usually so unhealthy. I make very similar ones but add in a mashed banana or applesauce. Paleo creations are so easy and really tasty. The pancakes are great to with a little coconut butter melted on top. Just like candy.

A mashed banana would be good with this and add some good natural sweetness without the maple syrup. Once you get the hang of these things it really is easy 🙂

Ya know, you’ve truly inspired me lately. it’s so funny. I used to talk all this smack about how i don’t ‘do’ the gluten-free baking and don’t ‘do’ the gluten free treats because i grew up baking traditional cakes and sweets and didn’t believe anything but traditional recipes would suffice. whoa was i wrong! it was after reading one of your previous yummy posts i randomly decided to bake some gluten-free chocolate cupcakes for my sweetie. note, I did cheat by buying the mix in a box in the gluten free section, but i added some walnuts and used walnut oil… that sorta counts, right? anyhow, sweetie LOVED the cupcakes so much.. even my anti-paleo family liked them. had no clue they were gluten free, of course! so i am not talking smack anymore, and now i’m going to embrace baking again…
also what i loved about this post, and found so funny, was that when i was your daughter’s age, i fell in love with cooking and baking. and pancakes was the first recipe i ever made for my mom… 🙂 really makes me smile thinking about it. something miraculous about making pancakes, and sharing them.

I am not all about “treats” either, but when I consider that eating something like this allows me to go on with my day unaffected by digestive upset, it’s completely worth it as a once in a while thing. It’s also great to be able to bake with very basic ingredients and have it still come out really good. And there is something really special about kids and pancakes! I’m not sure what it is, but they just light up about pancakes. They are also so proud when they can help bake something and then eat it of course!

LOVE enjoy life chocolate chips! They are the only ones we use and actually I just made some dark chocolate “reeses cups” last night with them for a girls get together. So good! These muffins would be a hit in my house since chocolate chip pancakes are always a favorite!

Um, yeah, I have grain free, dairy free pancakes (i usually mix coconut flour with garbanzo flour ( i know that is not paleo)) almost every night for dinner. Ha! Usually with homemade almond butter and jelly. But sometimes I add the Enjoy Life chips. So funny – your recipe looks awesome (and very familiar!) . I think your daughter and I could be good friends 🙂
I haven’t used coconut milk as the liquid. I usually use water. I also haven’t tried with tapioca flour which I imagine helps their “structure” . I’ll definitely test these two methods.

The tapioca flour seems to smooth out a little of the grainy coconut flour texture for me, which is why I add it to muffins and pancakes. I am definitely not an experienced baker so I basically do what works and then add some simple variations to that. It’s amazing the delicious things you can make with really simple ingredients! So I ended up using about 1/2 tsp stevia and adding more liquid, but I think the honey would have made them turn out way better! I still enjoyed them though.

I made these just as described and they were great! I noticed they stuck to the paper pretty hard core and I felt like I was waisting perfectly good bites peeling the paper off. A great snack for on the go, in the kiddos lunch, or even a side with coffee at breakfast.

I think there is an error in the recipe…
I used 1/2 cup coconut flour and 1/4 cup tapioca as written and my batter was runny like eggs… I’ve added another cup of coconut flour and they are in the oven now. I’m anxious in case they are a flop..
