This easy BLT chicken is made all in one skillet and packed with all your favorites. Juicy seasoned chicken with crispy bacon, cherry tomatoes, your favorite greens and a creamy, flavor packed sauce! It’s Whole30 compliant, paleo, and keto friendly and family approved. Great for a weeknight dinner and the leftovers save well for lunch the next day!
You simply can’t beat a good one skillet dinner! When creating recipes, I always consider my absolute favorite flavor combinations and foods/meals in general.
I mean, who doesn’t love a good BLT? Add chicken and a creamy sauce and make it a one-skillet dinner?
It’s obviously a big YES to ALL of it. You’re going to love this simple, healthy meal! Let’s get into all the details…
What You Need To Make Creamy BLT Chicken
This skillet meal uses simple delicious ingredients and all the right seasonings! I did decide to go with a dairy free cream cheese in the sauce to get it nice and thick.
You can use any dairy free cream cheese, or regular cream cheese if you can tolerate dairy and aren’t on the Whole30.
Here’s what you’ll need to prepare the BLT chicken:
- bacon, sugar free
- kite hill almond milk cream cheese (or other cream cheese)
- dairy free milk (coconut milk or plain unsweetened almond milk
- lemon juice
- dijon mustard
- nutritional yeast (optional)
- boneless, skinless chicken breasts
- Sea salt and black pepper
- Ranch seasoning blend
- garlic
- kale or baby spinach
- cherry tomatoes
- fresh chives or scallions
How To Make Creamy BLT Chicken
Heat a large deep skillet over medium high heat. Cook the bacon until crisp, then remove it from the skillet to drain on paper towels. Reserve 2 Tbsp bacon fat to cook the chicken and discard any remaining fat.
Meanwhile while the bacon cooks, add the cream cheese, milk, lemon juice, mustard and nutritional yeast in a bowl and set aside.
Season the chicken all over with sea salt, black pepper and ranch seasoning. Heat the reserved bacon fat in the skillet over medium heat. Add the chicken and cook for 4 minutes (approximately) on each side, or until a the outside deep golden brown and inside is cooked through (165° F) Remove the chicken from the skillet to a plate, cover and keep warm.
Add the garlic to the skillet and cook and stir for 30 seconds, then add the cream cheese mixture and whisk to combine well, then heat to a boil. Stir in the kale and 1/2 of the tomatoes and cook for another minute until the kale wilts and it bright green, then remove from heat.
Season the sauce with salt and pepper to taste. Add the chicken back to the skillet and sprinkle with the remaining tomatoes and crumbled bacon plus the chives or scallions.
What To Serve with Creamy BLT Chicken
I love this creamy chicken served over sautéed cauliflower rice to keep it low carb, plus the cauliflower rice soaks up lots of the delicious sauce!
You can also serve with seasoned roasted potatoes or sweet potatoes or your favorite roasted veggies like broccoli, peppers, mushrooms, etc.

Ingredients
- 6 slices bacon sugar free
- 1 8 oz container of kite hill almond milk cream cheese or other dairy free cream cheese
- 1 1/2 cups dairy free milk (coconut milk or plain unsweetened almond milk)
- 1 Tbsp lemon juice

- 1 Tbsp nutritional yeast optional
- 4-6 boneless skinless chicken breasts

- 4 cloves garlic minced
- 3 cups chopped kale or baby spinach
- 2 cups cherry tomatoes halved
- Sea salt and pepper to taste
- 3 Tbsp chopped fresh chives or 3 sliced scallions, for garnish
