With no added sugar, these easy No Bake Chocolate Coconut Butter Cookies are a healthy yet decadent tasting treat! Sweetened with bananas, dates and creamy coconut butter, these Paleo and vegan cookies have creamy cookie dough texture and are great for an after school snack!
Before the recipe shenanigans begin today (good one right here!) I NEED to tell the internet world (you guys) that today, my first born daughter (Diana) is 9 years old!
If you’re wondering if she gets a “real” birthday treat, the answer is YES. A full blown, mommy-can’t-eat-it-but-who-cares, homemade, DIY decorated chocolate layer cake. Picture later this week. Promise.
This is a big year for me. In fact, this is the year (come September) that I’ve bookmarked in my brain as “the year things will change.” Not because Diana is 9, but because Drew (little one) starts kindergarten. Which mean that this is the year that mommy (AKA me) needs to get her sh-a-zit to-get-her. Because – no more babies. You feel me out there, moms? Am I the only one who’s drawn this line in my head?
Of course, I made plans to “get it together” back when I didn’t realize that life as a mom doesn’t actually get easier – it only changes. No, I don’t have babies to physically carry around anymore, no diapers to change, or breasts to pump (none at all – literally they are gone.) And, I have more time during the day that the kids are not in my presence.
BUT, the time I spend doing “mom things” – including worrying about my kids and my parenting approximately 100% of the time, is the same. And, I’ve actually found that as I, myself, age, there is more to worry about.
So, what does any of my mom drama have to do with these no bake chocolate coconut butter cookies? I did have a plan, but I spiraled out on a tangent. I think the plan was to talk about easy after school snacks that you can make for your kids to grab, well, right after school. And these fit the bill! Entirely.
If there’s a #1 worry I have regarding parenting, it’s making sure I put in a full effort to keep my kids healthy – both mentally and physically. These cookies might be a very small part of that, but every little bit helps, don’t you think?
These little chocolate coconut butter cookies are BOM DOT COM, but really. They are completely fruit sweetened with no added sugar (if you omit the extra chocolate chips) and have an amazing creamy, cookie dough texture. You can drizzle extra coconut butter on top, or not – whatever makes your finicky little people happy will work just fine. They are also nut free – made with coconut flour and no added nut butters.
Not to mention, these Paleo and vegan no bake chocolate coconut butter cookies are also very mom-friendly, especially when eaten with berries and extra coconut butter drizzle. Just saying! I’ll get to the recipe now so we can drown in chocolate – in the healthiest way possible!
No Bake Chocolate Coconut Butter Cookies {Paleo & Vegan}
No Bake Chocolate Coconut Butter Cookies {Paleo & Vegan}
Ingredients
- 1 medium size banana overripe
- 2/3 cup dates softened*
- 1/3 cup coconut butter melted**
- 1/4 cup organic coconut flour
- 1/4 cup unsweetened cocoa powder or raw cacao
- extra coconut butter for drizzling
- optional add-in: 1/4 cup mini Enjoy Life chocolate chips
Instructions

In a food processor, process the dates until a thick paste forms. Add the remaining ingredients (except the chocolate chips) and process until a thick dough forms.

Scrape the sides of the bowl to make sure all ingredients are combined, and, if necessary, chill the dough in the refrigerator for 5-10 minutes to firm up. Stir in the mini chocolate chips, if adding.

Form the dough into 12-14 balls and flatten each one into a cookie shape. Drizzle with extra melted coconut butter if desired***

Store cookies in a covered container in the refrigerator for up to 4 days. Enjoy!
Recipe Notes
*If your dates are hard, soften by soaking them in 2 tbsp water and microwaving for 20 seconds
**If temperatures are colder and your coconut butter is solid, melt in by running the jar under hot water and then stirring to mix.
***The coconut butter drizzle will harden into a glaze at room temp and when chilled

I wish someone told me way back when my son was little that I would worry more now than then. it only gets harder which i dont think i realized. actually, maybe it’s better I didn’t know lol. my biggest concern way back when was that he would scrape his little knee as he learned to walk which is nothing compared to what it’s like as they get older and more independent. ugh! happy birthday to Diana!
