Hey guys! I’m sneaking in a crazy simple popsicle recipe the day before July 4th, because sometimes last minute treats are the best ones! I hope your weekend has been sunny, relaxing, and filled with family time and good food!
That being said, popsicles and I don’t always get along. Actually, it’s my freezer and I that don’t always get along. You see, I’m long overdue for a new refrigerator/freezer (trust me) and my current freezer is overstuffed and rebels by not freezing things unless you put them in all the way in the back. Which is not a far reach, since the freezer is pretty small, but nonetheless I’m left with even less space to freeze necessities like popsicles, ice cream and burger patties.
Anyway, my heart always pounds before I take a popsicle out of a popsicle mold. Can anyone relate? It’s sort of similar to the feeling I get before peeling a banana for one of my kids – heart pounding and praying for no brown spots. What kind of world do we live in that parents are praying for no brown spots on bananas? I’m willing to take actual responses to that one if you have!
The picture before the popsicle removal sure was suspenseful. Luckily my freezer, and these cherry vanilla popsicles, behaved for me really well! A nice “ending” to a very simple recipe.
Since popsicles are so melty (lovingly melty, but still) I figured that really no one wants to spend much time making anything fancy. So, this recipe is just 3 simple ingredients plus an optional touch of pure maple syrup if you want a little more sweetness. Blend, pour into popsicle molds, freeze, and of course pray. Unless you and your freezer are on really good terms right now, in that case, absolutely no stress for you!

Simple Cherry Vanilla Popsicles {Paleo & Vegan}
Ingredients
- 1 can full fat coconut milk cream and water separated and half the water discarded
- 2 cups fresh cherries pitted (I did this by hand pretty easily)
- 1 tsp pure vanilla extract
- 1-2 tsp pure maple syrup*
Instructions

Put all the ingredients in a blender and blend just until thick and creamy but not totally smooth. I like a few cherry pieces in the popsicles so I didn't blend until smooth.

Pour the mixture into 8 popsicle molds (or as many as it takes to fill your molds), freeze preferably overnight, and enjoy!**
Recipe Notes
*The addition of maple syrup is optional for added sweetness. You can use a few more cherries for more natural fruit sweetness!
**The "cook time" noted is actually the time in the freezer

Haha, there is ZERO room in our freezer too! It’s all undisclosed meat (ew?) and tons and tons of things companies have sent me that I’m never going to get through so I freeze it and then end up just never eating it :/ that this is PACKED though….it might be a frozen paradise if I actually look through it all!

I wish coconut milk was a thing when I was little. My mom used to make me homemade popsicles, but she’d basically just freeze juice so they’d be super icy. Love how simple these are 🙂

Sounds Delish.. Do you think this would work as an ice cream? We only have three small molds (lost one of the sticks?)

I think it would be too icy for ice cream at least without putting it through an ice cream maker. If you have one though I think this would work out 🙂
