These gooey caramel cinnamon baked apples taste better than apple pie filling with almost no effort at all! These baked apples are refined sugar free, paleo, vegan, and perfect with a big scoop of coconut vanilla ice cream!
It’s not secret that I’m a major apple pie fan! I had lots of extra apples last week and knew I had to experiment with a baked apple pie filling.
I’m seriously thrilled with how these baked apples turned out. They have a gooey sweet caramelized sauce thanks to a combination of coconut sugar and maple syrup, and of course all those fresh juices from the apples.
Plus, they’re ridiculously easy to make! Just toss the sliced apples with the other ingredients, and bake – that’s it! You can serve them basically right away – maybe 10-15 minutes of cooling time so you don’t burn your mouth. Don’t forget a scoop of dairy-free vanilla ice cream for full on gooey apple cinnamon heaven!
What You Need To Make Caramel Cinnamon Baked Apples
You’ll see the ingredients are very similar to my apple pie fillings. Super simple, fresh, so delicious! Here’s what you’ll need:
Sweet Crisp Apples (like honeycrisp)
Lemon juice
Coconut Sugar
Maple Syrup
Tapioca flour or arrowroot
Cinnamon
Nutmeg
Vanilla extract
Fine sea salt
Coconut oil
Do I Need to Use Both Maple Syrup AND Coconut Sugar?
I find that the apples have the best flavor (and also caramelize well) when I use a combination of maple syrup and coconut sugar in this recipe.
If you use all coconut sugar, you’ll need extra liquid so the apples aren’t too dry. A couple of tablespoons of water should do it.
If you use all maple syrup, you don’t get that deep caramel/brown sugar flavor that the coconut sugar provides. Don’t get me wrong – the apples will still be delicious if you just use maple syrup – but my flavor preference involves using both sweeteners!
What Can I Serve These Baked Apples With?
I love these caramel cinnamon baked apples as a dessert, served with a big scoop of dairy-free coconut vanilla ice cream. But, these baked apples are actually perfect for more than just dessert!
Use them to top coconut yogurt or baked n’oatmeal, or even serve them as a sweet side dish. They’d be perfect on any holiday table with the desserts or sides in my opinion.

Caramel Cinnamon Baked Apples (Paleo, Vegan)
Ingredients
- 6 large apples I used honey crisp peeled, cored, and sliced into 1/4” slices
- 1 Tbsp fresh lemon juice
- 1/4 cup coconut sugar
- 1/4 cup pure maple syrup
- 1 tsp pure vanilla extract
- 1 1/2 Tbsp tapioca flour or arrowroot
- 2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp fine sea salt
- 1 Tbsp Coconut oil or ghee (if not vegan), solid and broken into pieces
Instructions

Preheat your oven to 350° F and spray a 9” pie dish or casserole dish with coconut oil or avocado oil spray.

In a large bowl, toss the apples with the lemon juice, coconut sugar, maple syrup, tapioca or arrowroot, cinnamon, nutmeg and salt. Transfer to the prepared baking dish and dot with the coconut oil or ghee.

Cover the dish and bake in the preheated oven for 35-40 minutes, uncover and stir, then continue to bake uncovered another 15 minutes until apples are soft and sauce is bubbling and caramelized. Allow to cool slightly then serve alone or with coconut vanilla ice cream or whipped cream. Enjoy! Store leftovers covered in the refrigerator for up to 4 days.
