Crispy baked breakfast sweet potato fries smothered in bacon, avocado, tomatoes and of course perfectly fried eggs! Eat these healthy and insanely delicious fries anytime of day – they’re Paleo and Whole30 friendly.
I guess it’s no secret that I’m a breakfast lover? And when I say breakfast, you know I really mean “breakfast” AKA putting an egg or two on just about anything and eating it at anytime between 7am and 7pm, or later if for some reason I had chocolate for dinner.
Another thing I don’t hide my love for is sweet potato fries – I only eat them twice a day on most days, sometimes more. Orange, white, purple – whatever. My favorite method to cook them is cutting them into fries and roasting to crispy perfection – and if I tell you this is because my kids like them this way it would be only half true. The other half of the truth is that potatoes of all kind are tastier and more fun to eat in fry form. Duh, not exactly breaking new ground here.
Which is why I thought you guys might be into my little breakfast-anytime creation today – crispy and perfectly spiced baked sweet potato fries smothered in bacon, avocado, tomatoes, fried eggs and fresh chives. We like, we like – we love!
And we’ll eat them whenever we dang well please, you’re saying. I know – getting up early to roast sweet potato fries might be asking a lot, even for a morning-4-lyfe person such as myself – but wait! You can roast the fries the night before, store in the fridge, and then just heat them until toasty while you fry some bacon and eggs!
So, see? No excuses not to eat these smothered breakfast sweet potato fries for your actual breakfast! Or your actual dinner or actual 4pm snack or actual 7th meal of the day – you don’t judge me and I don’t judge you mmkay?
And psst! By the way – definitely use the egg yolks for dipping if you want to literally go to savory breakfast heaven. Just saying – I mean, at some point I had to learn this myself, so I’m giving you the tip now so you can potentially add on years of yolk-dipping ecstasy to your life. I’m here to take care of you – this is my mission!

Smothered Breakfast Sweet Potato Fries {Paleo & Whole30}
Smothered Breakfast Sweet Potato Fries {Paleo & Whole30}
Ingredients
- 2 medium sweet potatoes any type, peeled (or scrubbed, optional) and cut into fry shapes.
- Fine grain sea salt to taste
- dash chipotle pepper
- 1/4 tsp smoked paprika
- 2 tsp olive oil or preferred fat for roasting
- 5-6 slices good quality bacon sugar free for Whole30 compliant - cooked until crisp, drained, and crumbled
- 1 small ripe avocado or half of a larger one
- 1/2 cup quartered cherry tomatoes
- Fresh chives chopped, for garnish
- 2-3 eggs - one for each serving - cooked to preference
- *Hot sauce - optional for extra spice and flavor
Instructions

To make the fries, preheat your oven to 425 degrees and line a large baking sheet with parchment paper. In a large bowl, toss the cut sweet potatoes with the olive oil, salt, paprika, and chipotle pepper until evenly coated.

Arrange the sweet potatoes in a single layer on the baking sheet with enough room around each one (no touching) to ensure crispy fries.

Roast in the preheated oven for 20 minutes, flip (or shake the dish a bit) and continue to roast for another 15-20 minutes or until browned and crispy on the outside.

While the sweet potatoes are roasting, prepare the bacon and eggs. I like to fry my eggs in bacon fat sunny side up, but cook yours however you prefer.

When the fries are done, top with crumbled bacon, quartered cherry tomatoes, diced or sliced avocado, chopped fresh chives and cooked eggs. Drizzle with a bit of hot sauce if you choose. This will make 2-3 servings depending on how hungry you are! Enjoy any time of day!

you know I love eggs with sweet potato fries! one of my go-to lunches lately. I usually make an omelette or quickly scramble the eggs and whites. oh, and it’s a great day when I have Japanese sweet potatoes!

Mium….sweet potatoes… I pretty much have some everyday without getting tired… I usually bake them the same way you do but I cut them in thin slices. Easier I guess. But fries are fries so I need to give this a try! I’m an omelette lover : I like to mix my eggs with my favorite veggies or try new combinations of ingredients when I feel adventurous 😉

I don’t know how you manage to get your sweet potato fries so crispy looking! Min always turn out either a bit limp and soggy or just burnt!

Check out my recipe for crispy baked sweet potato fries – the key for me is the right amount of oil, parchment paper and lots of space around them. I use two huge baking sheets and take up the whole oven if I have to!

You know what’s crazy? I kind of forgot about sweet potatoes for a while there. But lately they seem to be popping up in my life all.the.time, so I think it’s a sign that I need to get back on that bandwagon. Crispy fries are definitely the best way to go!

I eat about 10 meals a day. More than half (like, 8 or 9 of 10) include “breakfast foods”. Sweet potato fries ALL the time. I don’t understand why you think people would judge you? 😉

Yummy! Took a while to make- next time I will precook the bacon and sweet pots the day before. Used cayenne and chili powder since I didn’t have chipotle.
