What You Need to Make Paleo Breakfast Burrito Bowls
The ingredients are simple and so tasty! Here’s everything you’ll need to prepare the recipe:
- Coconut oil or avocado oil
- Cauliflower rice – fresh or frozen
- Fresh lime juice
- Jalapeño pepper
- Sea salt and black pepper
- Onion powder
- Garlic powder
- Chipotle powder

- Bell pepper
- Onion
- Eggs
- Avocado
- Fresh Cilantro
How to Make Breakfast Burrito Bowls
Start with the cauliflower rice. Heat a large skillet over medium heat and add coconut oil or other fat and add the cauliflower rice, stir to coat. Cook, stirring occasionally for 1-2 minutes to soften.
Add the jalapeño pepper, salt and pepper, seasonings and lime juice. Cook and stir another minute or until you have desired texture, then remove from heat.
Meanwhile, heat a separate skillet over medium high heat and add 1 Tbsp oil. Add the sausage pieces and cook 2-3 minutes, stirring, until golden brown. Add in the peppers and onions and continue to cook until soft and toasty – about 3 more minutes. Season with salt and pepper to taste.
To assemble the bowls, divide the cauliflower rice among the 4 bowls and top with the sausage mixture. Use one of the skillets to cook your eggs (if you haven’t yet) and top each bowl with an egg, sliced avocado, cilantro and a squeeze of lime.

Tips for Meal Prepping These Breakfast Bowls
You can easily meal prep these breakfast bowls. Simply prepare everything ahead of time, except for the eggs (unless you’re scrambling them).
Divide into bowls, then reheat and top with your cooked eggs and avocado. Sprinkle on a little cilantro and a squeeze of lime if you like and you’re good to go!

Ingredients
Cauliflower Rice:
- 1 tbsp coconut oil or avocado oil
- 12 oz cauliflower rice - fresh or frozen
- 2 tsp fresh lime juice
- 1 Tbsp jalapeño pepper minced optional
- Sea salt and black pepper to taste
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- Dash chipotle powder
Sausage, Peppers, Onions:
- 10 links Jones Dairy Farm No Antibiotics Ever All Natural Golden Brown Chicken Sausage 1 package, thawed and cut into bite size pieces
- 1 Tbsp coconut oil or other cooking fat
- 1 large bell pepper chopped
- 1 medium onion chopped
- Sea salt and black pepper to taste
Instructions
For cauliflower rice:
