This is the recipe that started a big time balsamic vinegar obsession over the past week or so. Since then, I’ve also made balsamic glazed pork chops and another veggie dish with a balsamic reduction.
Yes, it’s safe to say I’m completely obsessed with balsamic vinegar and now want to add it to everything I cook. No worries though, because I won’t actually add it to everything – at least not after I get over the current honeymoon and move onto something else just as delicious.
For now though – here we go with these brussels sprouts! Trust me – with all the crispiness and flavor, you too will be just as balsamic-crazy as I am.
Okay, getting past the balsamic, the thing I LOVE about this recipe is how incredibly simple it is.
You’d never know it by seeing (or tasting) the finished product of course, but it’s so easy it almost seems too good to be true!
It goes like this – cut brussels sprouts and arrange on baking sheet, top with bacon, roast, sprinkle with garlic and balsamic, roast again, and BOOM! Easiest, tastiest side dish, ever.
And – because you know I HAVE to tell you this when it comes true – even the kids liked it.
In fairness, my kids pretty much will eat anything where crispy bacon is involved. As for me, I will eat anything where brussels sprouts are involved, in case you haven’t noticed.
I especially love getting brussels sprouts roasted up nice and crispy, and including the leaves that fall off while chopping in the mix for crispy veggie-chip heaven!
That’s not an exaggeration at all – and for those of you who go wild for brussels sprouts chips, I’m sure you know exactly what I mean.
Pre-paleo, if you would’ve told me I’d love a veggie side dish this much – I wouldn’t have understood what the heck you were talking about.
But now – it’s all I have in me not to eat the entire bowl with a spoon. Not kidding.
So, three cheers (or four) for the sprouts, balsamic, garlic and bacon – now let’s cook!

Garlic Balsamic Roasted Brussels Sprouts with Bacon {Paleo, Whole30}
These crispy bacon, garlic and balsamic roasted brussels sprouts are packed with flavor and make the perfect side dish for anytime! Whole30 and paleo friendly, plus kid approved!
Ingredients
- 1 lb brussels sprouts halved (or quartered for larger ones)
- 4-6 slices nitrate free bacon sugar free for whole30
- Salt and pepper
- 4 cloves garlic minced
- 2 Tbsp balsamic vinegar
Instructions

Preheat your oven to 425 degrees. Spread brussels sprouts in a single layer on a large baking sheet. Cut bacon into pieces, then sprinkle all over Brussels sprouts.

Roast in the preheated oven for 15 mins, then stir and return to single layer and continue to roast another 5-10 mins until bacon is crisp. Drizzle all over with vinegar and sprinkle with the garlic.

Continue to roast another 5-7 mins or until browned and crispy. Serve as a side dish anytime! Enjoy!

Found some nice sprouts on the stalk at Trader Joe’s this weekend. Looking for recipes and came across this. Easy to make, everything crisped up nicely from roasting. I made these for my wife’s lunch tomorrow to go with leftover prime rib, after we already had dinner out, and I still ate about 10 or 12 of them myself, so good! Will take a look at your other recipes as well.

We love roasted brussel sprouts, but the balsamic vinegar was not something I had tried with this particular vegetable before. Delicious! They were a great side dish with roast pork.
