This Baked Salmon in Foil with Garlic, Rosemary and Thyme is easy and out of this world delicious! An simple mix of melted ghee, garlic and fresh herbs (plus a little lemon) give this salmon fillet tons of flavor and a high oven temperature gets the skin a little crispy! It’s perfect with all your favorite holiday side dishes and salads, plus quick to throw together.
If you’re craving something a little different, super tasty and also quick and easy this holiday season then I have a huge treat for you! And truly, even if you’re not looking for a turkey replacement or anything, this salmon recipe is an absolute must-try for an anytime dinner.
There’s almost nothing as delicious, easy, and satisfying as baked salmon in foil. And yes, this recipe is simple but doesn’t lack anything at all in the flavor department. With lots of melted ghee, garlic, fresh rosemary and thyme, and a little lemon you’re getting ultimate flavor with minimal work.
Because I’m also a fan of crispier salmon skin (okay OBSESSED) I also decided to raise the oven temperature higher that you typically would, and bake the salmon near the bottom of the oven. The skin will crisp up around the edges just the way I like it!

What To Serve with this Baked Salmon
This baked salmon fillet would be perfect with any of your favorite holiday side dishes or salads (especially my cauliflower stuffing or butternut squash salad – or both!) I also love cauliflower fried rice, crispy roasted potatoes, mashed potatoes, and all types of roasted veggies!
Zucchini noodles or simple green salad are all tasty options as well. You really can’t go wrong here!
How To Store Leftover Salmon
This recipe makes several portions of salmon and if you have leftovers, you can definitely save them. I recommend placing any cooked salmon in a sealed container in the refrigerator within 30 minutes of cooking it, if possible. You can store it in the fridge for up to 4 days, and reheat in the oven or on the stovetop.
I know you’re going to love this simple, flavorful salmon recipe! Grab your ingredients and preheat your oven because it’s time to start – let’s go!

Baked Salmon in Foil with Garlic, Rosemary and Thyme {Whole30, Keto}
Ingredients
- 3 lb PrimeWaters Salmon Fillet**
- Sea salt and black pepper
- 6 Tbsp ghee melted
- 4 cloves Garlic minced
- 2 tsp fresh rosemary minced
- 2 tsp fresh thyme leaves
- 1 Tbsp Lemon juice
- 1 Tbsp parsley minced, for garnish
Instructions
-
Preheat your oven to 400° F and line a large baking sheet with foil, extra long to wrap the salmon later on. Spray the foil with avocado oil cooking spray.
-
In a bowl, whisk together the ghee, garlic, rosemary, and thyme. Pat the salmon dry and sprinkle all over on both sides with sea salt and black pepper.
-
Pour the ghee mixture over the salmon to evenly coat, rubbing the ghee on the skin underneath too to coat (it will crisp up a little this way). Sprinkle the lemon juice over the top of the salmon.
-
Wrap the salmon with the foil, using extra to cover the top. Bake near the bottom of the preheated oven for about 18-20 minutes or until just cooked through (exact cook time with depend on thickness*)
-
Unwrap the salmon so the top is completely exposed and switch the oven to “broil”. Place the unwrapped salmon under the broiler for about 3-4 minutes, watching it to prevent burning, until the top is browned to preference.
-
Remove from the oven, sprinkle with minced parsley and serve immediately. Enjoy! Store leftovers in a sealed container in the refrigerator for up to 3-4 days.

I love your recipes! I haven’t yet made this one yet (which sounds delicious!)but my husband and I eat grilled or baked salmon weekly, typically seasoning it with maple pepper. I wanted to pass along a suggestion- my favorite way to eat leftover salmon: cold as the protein on my salad for lunch the next day! Yum!

This was a great recipe. I would not have thought this combo would work with salmon, but oh yes. I added thyme and lemon peel and garnished with chive flowers. I can’t eat dairy so substituted with vegan butter. Amazing – thanks!

This is delicious! I had fresh frozen herbs left over from Christmas! What an amazing flavor combo for salmon. I baked white sweet potatoes and steamed some green beans. The sauce from the foil packets (I made 4 mini foil packs) were perfect compliments to the entire meal. I served it layered so all the juices permeated the meal. First green beans, then one inch discs of baked white sweet potato and finally the fish with a squeeze of lemon. I love all your recipes. Thank you so much!

Can you make this an air fryer? I struggle with baking salmon as the smell gets to me, but it doesn’t seem to be as strong in the air fryer.

Is there a substitute for foil to cook it in? Aluminum is toxic, is it not?

Just made this salmon using filets and this was so easy and so good. Love the fresh herbs which I grow myself, so I am always looking for dishes where I can use them. I had a little bit of the herb mixture left so I added butter to it and rubbed it on some corn on the cob that we had with this salmon. Oh, so good!
