I have more meatloaf coming your way! Last week I posted this Whole30 chipotle turkey meatloaf and today we’re going in a totally different direction with a savory bacon wrapped loaf smothered in mushroom gravy.
It’s the type of meal that’s perfect when the temperatures drop and you’re constantly freezing – which I am right now actually. We’re in that part of January where it’s both cold and windy.
Frankly I’m already over it – once the holidays pass I’m ready for Spring, ya know? But here we are, with meatloaf to the rescue, luckily. So cozy up inside with the perfect bacon wrapped meatloaf and your favorite pair of sweats 🙂
I almost didn’t wrap this meatloaf in bacon, and that would’ve been a mistake! There’s just something about the bacon-mushroom combo that gets me every time, and it works so well here.
The meatloaf itself is pretty basic and similar to my recipe for salisbury steak meatballs. There’s tons of flavor and not a whole lot of prep.
Since it’s mostly made in the oven, I’d say that this recipe is a simple one that doesn’t leave you exhausted and sweating like some stove-top ones do! It’s bound to become a new favorite!
I used a casserole dish rather than a loaf pan so the bacon can get all the way around to the bottom of the loaf and still cook properly.
To get the bacon nice and crispy, it’s broiled at the end of the cook time while you make the mushroom gravy.
Every oven is different, but mine took just about 3-4 minutes under the broiler to crisp up. Make sure you set a timer so you don’t burn it while making the gravy! I speak from experience, of course 😉
This meatloaf keeps very well for leftovers even if you’ve already smothered it with the gravy. I had this for lunches over the following three days after making it and it was just as tasty as it was the first day!

Bacon Wrapped Meatloaf with Mushroom Gravy {Paleo, Whole30, Keto}
Ingredients
For the Meatloaf:
- 2 lbs grass fed ground beef
- 2 eggs
- 3 Tbsp blanched almond flour *sub 2 Tbsp tapioca or arrowroot for nut-free
- 1/2 med onion minced
- 3 cloves garlic minced
- 1/4 cup white mushrooms finely chopped
- 3/4 tsp fine grain sea salt
- 1/4 tsp black pepper
- 2 Tbsp spicy brown mustard
- 1 Tbsp coconut aminos
- 6-8 slices nitrate free bacon {sugar free for Whole30} - to wrap loaf
- 1/3 cup beef bone broth
Gravy:
- 1 Tbsp ghee or other cooking fat
- 1 1/2 cups white mushrooms sliced
- Pan drippings from meatloaf
- 2 Tbsp arrowroot starch or tapioca
- 2/3 cup beef bone broth
- 2 Tbsp coconut cream
- Parsley for garnish
Instructions
For the Meatloaf:

Preheat your oven to 350 degrees F. Place all ingredients for meatloaf in a large mixing bowl except for the bacon and broth. Mix well with your hands until combined, without overworking the meat.

Transfer meatloaf mixture to a casserole dish and form a loaf shape. The dish should be large enough to leave some room on both sides of the loaf.

Lay the bacon slices over the top of the loaf and down the sides, gently wrapping underneath if they’re long enough so they don’t curl up. Pour broth all around the loaf, then place dish in the oven and bake for 50-55 mins or until cooked through.

Remove meatloaf from oven and switch the oven to the broil setting. Carefully pour pan drippings into a bowl and whisk in the tapioca to dissolve. Return meatloaf to oven to broil for 3-5 mins or until bacon is crisp.
For the Gravy:

Meanwhile, heat a saucepan over medium high heat and add the ghee. Sauté the mushrooms until soft, then pour in the tapioca/pan dripping mixture. Once thickened, whisk in the broth and coconut cream and bring to a boil. Lower heat to a simmer and continue to cook another 3-5 mins. Once done, taste and season as desired with salt & pepper.

Serve meatloaf with the gravy and garnish with parsley. Serves 6-8. Enjoy!

This recipe is amazing! We made this meatloaf but substituted 2 tbsp cashew butter for the coconut cream in the gravy recipe because my daughter is allergic to coconut and it was fabulous! Making this for my Mom’s 81st birthday celebration. Because it was voted as the best by my husband and daughter. Party this Friday the 25th! So excicted. The leftovers were AMAZING too! Soooo tasty… cooking in the broth helps the moisture level. I did grate 1/4 zucchini in as that also aids in a moist meatloaf. I might have done the sauce wrong as it seemed alittle gluey? 2tb may have been too much tapioca…or maybe that’s the texture? Regardless it was a huge hit…i served with streamed broccoli n cauli with herb n garlic butter.
