Isn’t bacon + sweet potatoes maybe just the best food combination ever? Ever since I made my first sweet potato bacon hash the two have been happily hand in hand in so many of my recipes!
Today is a special and fun one – because it’s something I haven’t done before. That’s right – we’re taking our favorite combo and giving it the waffle iron treatment. Obviously taking it straight up to the next level of yumminess.
And yes – even though these are called “waffles” and made in a waffle iron, they are still technically Whole30 compliant. Unless you are being extremely strict about the SWYPO idea, these savory waffles are good to go on Whole30.
The thing is, although made in a waffle iron, they aren’t actually waffles in the way we think of them. They are essentially fritters, really, with no added sugars, flours, or really anything else except whole, real-food ingredients.
Let’s start with the bacon – because let’s face it – it’s a most frequently asked question over here! Specifically, “where can I find bacon that’s Whole30 compliant?!” Luckily there is now a great selection of no-sugar added bacon. But let’s chat for a minute about my go-to no sugar, uncured bacon from Jones Dairy Farm.

After the bacon, we have our sweet potatoes, of course! I shredded mine in my food processor to make it easy, but if you don’t have one, a hand grater will work well.
For a binder, we’re using eggs, plus green onions, sea salt and spices for flavor. The recipe itself is very simple and perfect for when you want something a little special but don’t want to work so hard in the kitchen!
Oh, and don’t forget your toppings! I fried a few eggs and more Jones Dairy Farm No Sugar bacon to crumble over the top, plus thinly sliced green onion and a little crushed red pepper for spice.
You can also top with sliced avocado or guac, and really anything else you happen to be in the mood for to make these sweet potato waffles your own!

Savory Bacon Sweet Potato Waffles {Paleo, Whole30}
These savory bacon and sweet potato waffles are crisp on the outside, packed with tons of flavor and a fun weekend breakfast or brunch! Top them with fried eggs and more crispy bacon for a super tasty, filling, wholesome meal that you’ll want to make again and again! Paleo and Whole30 friendly.
Ingredients
- 2 medium sweet potatoes peeled and shredded*
- 5 slices No Sugar Hickory Smoked Bacon from Jones Dairy Farm
- 3 eggs
- 3/4 tsp sea salt
- 1/4 tsp black pepper
- 3/4 tsp garlic powder
- 3/4 tsp onion powder
- 3 scallions white and green parts separated
- Rendered bacon fat or other cooking fat to brush on waffle iron or other cooking fat to brush on waffle iron
Toppings:
- Fried eggs
- Thinly sliced scallions green parts
- Crushed red pepper
- Extra crumbled bacon
Instructions

Drain your shredded sweet potatoes on paper towels and squeeze to get rid of excess moisture. Place in a large mixing bowl.

Heat a large skillet over medium high heat. Cook the bacon until crisp and drain on paper towels, then crumble.

Add crumbled bacon to mixing bowl along with the eggs, salt, pepper, garlic and onion powder. Finely chop the white parts of the scallions and add them in as well, saving the green part for garnish.

Preheat your waffle iron and mix ingredients together well to form a “batter”. Brush waffle iron with rendered bacon fat or cooking fat of choice.

Once fully heated, add your batter to the iron. I used an 8” round waffle iron and made 3 full waffles with my mixture. Depending on the size and style of your waffle iron, you may make fewer batches.

Close waffle iron and cook until deep golden brown on both sides and crisp on the outside. While the waffles cook, you can prep your toppings (fry eggs and extra bacon) if desired.

Release waffle from iron carefully and repeat until batter is used up. This recipe should yield about 6 servings.

Top with fried eggs, more bacon, and anything else you like. Enjoy!

I have loved every recipe I have made of yours, they are delicious. However, I tried this one and was disappointed because mine didn’t turn out at all. They never crisped and it took forever in the waffle maker to even soften them. I wish there was a pic of the batter so I knew if mine was correct or not. I wanted to love this so much!

I knew before I tried this recope they wouldn’t crisp up because sweet potatoes never crisp up without some extra starch like potato starch or corn starch. So I had the same results. Very tasty but definitely not crispy. Only regular white potatoes crisp up without extra starch (as long as they are squeezed of water first)

Made these today with 2 sweet potatoes. I had no green onions so I just minced up some sweet onion and used that instead. They were so delicious!

agreed! there is no picture of the batter or the grated sweet potatoes which are key to cooking up correctly. I have a fine and regular setting on my food processor and wasn’t sure what one to use. More pix of the steps are needed. I used the regular shredding setting and they ended up great, but would be nice to have clearer instructions and photos, not just product placement of the bacon brand.

I had to get a waffle iron to try this. Glad I did. Added little bit of grated Jalapeno – after all, this is Texas! took about 15 minutes to cook, a bit longer probably wouldn’t hurt
Cream cheese topper, hubby likes it!!! Guacamole would be good too.

This was really good! I cooked a little longer past “done” in my waffle iron to make sure potatoes were extra crispy. This was especially dog with an egg and slice of bacon on top.
