These Apple Cinnamon Paleo Pancakes combine a sweet, soft, perfectly fluffy coconut flour based pancake with a gooey cinnamon apple topping – yum! One batch will feed the whole family and keep everyone warm and happy for breakfast on a cool fall morning. Gluten free, dairy free, refined sugar free, nut free.
I think I finally figured out how to flip pancakes. Although I suspect some degree of luck and other unknown energies/forces might be responsible for what happens between side one and side two, right? I think I’m getting better though, learning how to focus on the pancake, sense when the flipping should happen predict the approaching angle that will yield the best landing, etc. Obviously I also have to thank a nice wide pancake spatula purchased on Amazon. Well look at me now, I’m writing an acceptance speech.
Oh shhhhhhush, you’re talking about pancakes. If you’re going to talk about flipping pancakes in a pan at least provide a video or something visual. But then they’d find out I have absolutely no clue what I’m talking about. The pancakes got flipped. We laughed, took pictures, ate them. And of course I did remember to write down the recipe, which is what this whole painful intro is trying to lead up to anyway!
But can we please go on about my history with pancake making for at least another paragraph? Because it IS sorta important. Here I go:
So, years ago, I used to find it very tedious and messy to make pancakes, paleo or otherwise, and would dread my kids asking for them and then the guilt that came along with saying no. Of course I never said no, I just got frazzled. It’s almost impossible to say no to requests for pancakes.
There is an unwritten parenting rule that Pancake Sunday (or Saturday, whatever day I’m not running) needs to happen at least every other week if you are worth your salt as a parent. I guess IHOP can count if you’re into it, however I just can’t do IHOP – I’d rather suffer through splattering the kitchen in pancake batter and cleaning it before doing IHOP on a weekend morning.
Then, a few years ago – somewhere on the internet, or in a cookbook, I can’t remember – I read life changing pancake advice. Just make the batter in a quart sized measuring cup and you eliminate a lot of the fuss and mess involved in getting the batter onto the pan/griddle.
Yup, all the build up was for that little gem. I’m sure you’re looking at me like, uh, yeah? But really, this made a big difference for me and my attitude toward Pancake Sunday. If you don’t already do this, give it a try and you might just be writing about it in a blog post 5 years from now. Who knows?

Apple Cinnamon Paleo Pancakes {Nut Free}
Ingredients
- For the Pancakes:
- 4 eggs
- 1/2 cup unsweetened applesauce
- 1/2 cup full fat coconut milk - from a can blended prior to adding
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1/2 cup coconut flour
- 1/4 cup tapioca flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder*
- 1 + 1/2 tsp ground cinnamon
- 1/4 tsp sea salt
- coconut oilto grease pan 1-2 tbsp or as needed
For the Apple Topping:
- 2 large apples - I used pink lady but any cooking apple will work - peeled and sliced or chopped
- 1-2 Tbsp coconut oil
- 1 tbsp pure maple syrup
- 3 Tbsp water
- 1/2 tsp ground cinnamon
- Pinch sea salt
Instructions
Make the apple topping first -

In a large nonstick saucepan or skillet, melt 1 tbsp of the coconut oil over medium heat. Once hot, add the apples and stir to coat.

Add the maple syrup and cook the apples over medium heat, stirring often to promote even browning.

Lower the heat and add a bit more coconut oil to prevent over-browning. Cook over med or med-low heat until the apples are soft, and caramel colored. Stir in the water and cinnamon and cook over low heat until thickened, about 30 seconds, then remove from heat and set aside.
For the pancakes, in a large bowl or measuring cup, whisk together the eggs, applesauce, coconut milk, maple syrup, and vanilla until very smooth. Add in all the dry ingredients (a separate bowl isn't necessary) and whisk until a thick smooth batter forms.

Heat a large nonstick skillet or griddle over medium heat, then add coconut oil. Once the pan and oil are heated, pour the batter - about 1/4 cup at a time - to form pancakes and gently spread each one into a circular shape.

Once the first side is golden and bubbles form on the surface, carefully flip each one. Cook the second side until golden brown, adjusting heat to prevent burning.

Cook the pancakes in batches, adding a bit of coconut oil to the pan between batches. Top the pancakes with the apple mixture and serve warm.

Enjoy! Makes 10-12 pancakes total.
Recipe Notes
*For a strictly paleo baking powder (corn free) mix 1 tsp baking soda with 2 tsp cream of tartar. For this recipe, you will need just 1/2 tsp total of this mixture.

These look delicious! I am actually pretty good on the pancake flipping. I think the key for me is having patience. If I try to flip too soon, it wouldn’t work. Also, a greased pan is necessary so that they flip over easily. I always see pancakes and decide I will have them for dinner and then dinner comes and I don’t want them lol

These look amazing! We are big supporters of Pancake Sunday in our house. I usually just make my pancakes in a large bowl and then use a quarter cup measuring cup to scoop the batter out, but it does get messy. I should try the quart sized measuring cup trick!

Okay, well maybe I’m just pancake-spoiled since I’m only ever making them “for one”. But pancakes happen Saturday and Sunday, in 10-15 from start to finisher (even clean-up). Everything is down to a science and the recipe I’ve been making all summer makes 2 perfect large pancakes and basically…yea…it’s just perfect. I consider myself a pancake flipping queen though 😉

These were amazing! I have tried several pancakes recipes and have been consistently disappointed. I got rave reviews on these. I recommend doubling the apple topping. I also added pecans to the top of the pancake. Delicious.
