I had one of those “you know you’re a blogger when…” moments this morning when I did an actual term search on my own homepage for the word “sick” to figure out the last time I was, you guessed it, sick.

Anyway, just as I suspected, I was last sick with a cold right at the end of June last year so I am not surprised that I woke up with a sore throat and runny nose. I’m just one week off to the day from last year’s bug. Plus that whole traveling thing, it just doesn’t seem to agree with me and I’ve been feeling wiped out since we got back.
I guess the timing is as perfect as any to come down with a cold – post trip and pre marathon training – so I will not complain. But of course I just did. I just thought you all should know. Plus otherwise how would I get an accurate search result from my blog for the next time?
Okay, enough is enough. As tired as I was on Sunday I must have been in food prep withdrawal because I created two recipes that WORKED (yay!) albeit one of them (this one) is so simple that I’m not even sure it counts. There is a little more to it than just cut fruit so I’m going to get away with it I think.
One thing I noticed in Seattle (okay actually Adam noticed it, which means it was extremely noticeable) was that the berries were sweeter and tastier than what we have here. Even the organic pricey berries here do not compare to what we had on our trip.
So, maybe that’s what prompted me to add a little “boost” to some of the fruit I bought once back home. Or maybe it was me trying to get a piece of the whole 4th of July barbeque thing. As if Googling “fruit salad” would bring up my speck of a blog after posting this. Yes, that’s a really silly thought. So maybe I just wanted my fruit a little bit sweeter, we’ll go with that story.
In addition to giving your sad NY metro area fruit a little kick, this maple citrus fruit salad is low FODMAP, so, unlike many other fruit salads, it’s highly unlikely to cause you distress in the hours to come. The dressing is light, tart/sweet and allows the natural flavors of the fruit to hold the spotlight. Plus, you drizzle it on as you serve so the fruit doesn’t marinate in sugar. I’m not a fan of marinated fruit, know what I mean?
Maple Citrus Fruit Salad - Low FODMAP
Ingredients
- For the Fruit -
- 2 cups fresh cubed pineapple - I used about half a pineapple
- 1/2 lb fresh strawberries halved
- 3/4 cup fresh blueberries
- 2 mandarin oranges peeled and sectioned
- For the Dressing -
- 1 tbsp fresh squeezed lemon juice
- 1 tbsp fresh squeezed lime juice
- 2 tsp pure maple syrup
- * 1/4 tsp vanilla - optional - it will give the fruit more of a "creamsicle" flavor.
Instructions

Combine prepared fresh fruit in a serving bowl.

Whisk together the dressing ingredients in a small bowl. Right before serving, drizzle the chilled dressing over the fruit and lightly toss. Alternatively, you can serve the dressing on the side and drizzle it on to control the amount and sweetness.

Store any unused dressing or fruit in the refrigerator. Enjoy!

I know the last time I was really sick was in December, and part of the reason I remember that is because I posted about it. What would we do without our blogs to help us remember every detail about our lives?
We usually have a hard time finding really good berries, and the best ones we usually find are at fresh market. I don’t think I have ever noticed if they are different away from the east coast, but I wouldn’t be surprised because it seems like alot of things are better out west!

Local always tastes best, or fresh picked ones around here but obviously my main source is the grocery store since we go through a ton! This cold is turning out to be very mild so I got away easy 🙂

I’ve searched my blog before for reminders–that’s what it is there for! I love mixing maple and citrus–maple can be such a heavily sweet flavor that the citrus just picks it straight up! I’ve had a few cocktails like that, too. Delicious! I hope that you feel better!

I have been feeling really burnt out lately and need rest. I always feel that way when I’m injured. I guess my body repairs itself that way. I’ve been trying to honor that by getting more sleep but it is hard. I usually don’t get sick in the summer. It’s just too hot! Love the little kick you gave to the fruit and yes, it counts as a recipe!

We tend to get a few summer bugs, this cold is extremely mild and felt worse yesterday. I used to get week long colds so this is a good sign! And yes, get more rest 🙂

I feel left out that the berries are better on the West Coast. I think they’re pretty good here but obviously I’m missing out! Sorry you’re not feeling well. It’s always weird to me how we can get “colds” in the summer. Doesn’t make sense 😉

I thought ours were good too until we had them last week, there’s a difference! And yeah I’m not a fan of summer germs. There are actually a lot of viruses that kids get in August, worst timing!

Not totally sure about West vs. East coast berries since I’ve never been to the West coast, but I totally can taste a difference in seasonal vs. non-seasonal fruit and veggies. Last time I had a cold was about two weeks after Boston. Pretty sure my body was just super run down, and running in freezing cold rain probably didn’t help either! Great recipe, love the dressing! This cold seems mild, thank goodness! I’ve also tended to get sick after a big race or even a really long training run.
Definitely a huge difference when fruit is in season, loving all things summer now 🙂

We’ve all got colds over here too! Which is weird because we’ve all been quite healthy over the winter, but as soon as summer shows up, we all get sick. Kinda sucks, but it’s not too bad. Interesting about the berries being sweeter over here. I am obsessed with our berries, and now I feel justified. Ha! I can see that blackberries are on their way to being ripe which is nuts because it’s not usually until August that this happens but our heat wave (that isn’t going away) is making everything bloom and ripen way earlier. I love blackberries. My most favourite food ever.

We tend to get summer bugs too, especially the kids later on in the summer. Hoping now that they’re a little older it’s not so bad! And you guys really are having a crazy heat wave, I bet that has something to do with the yummy berries!

now this fruit salad has it going on and then some! wow that dressing is simply genius, I love this! I always notice fruit and produce when I travel – it is really good to me overseas; it’s also good in Florida and California, those are the places I notice mostly. honestly I can’t say I was wowed by the fruit scene in Colorado but I always love going 🙂 family! I love to eat the local stuff and try to eat whatever grows best I that area.

Summer is so the time to get fruit crazy! I love it, but then end up with such an over abundance of fruit in the house! Fruit salads are always the way to “get rid of it”! Now….I think you should add some poppy seeds! Hahaha! They make every fruit salad cute 😉
And yea, it’s always a hit of miss with fruit and berries over here…..sometimes the strawberries and superb, next week they are TERRIBLE! One thing that always seems to be good….grapes….weird…

A very mild cold so I’m going to thank all the citrus I’ve been consuming for that! With 3 fruit crazy kids we have the opposite – I think I have way too much and then it’s gone in 2 days – insane! Poppy seeds would be a great addition 🙂

I don’t fly often but that’s probably the case with me too since I’m sensitive to travel. Luckily this was so mild, almost gone today. I’ll thank the citrus for that 🙂
