Easy, fast, and healthy Chipotle Roasted Almonds that are perfect for a crowd or anytime snacking! They’re packed with savory, smoky flavor and have just the right amount of spice. They’re a Paleo and vegan snack that everyone will love.
These chipotle roasted almonds are one of those “accidental” recipes that seems to happen whenever you (I?) have guests over and start to panic that you won’t have enough food for everyone. Even if it’s just my family coming over, this happens to me every time.
I have Thanksgiving to thank for this one. I had already planned out the entire menu for the entire day – but of course once everyone was there and hungry it just didn’t seem like enough food anymore!
Yes, I definitely could’ve thought ahead and bought some roasted flavored nuts, since needing to use my oven for one more thing on Thanksgiving or any other big gathering is not ideal.
But, in my little moment of panic that my family would “starve” over the lack of pre-feast snack-ables, I glanced over at the huge container of raw almonds I had, just sitting around, and thought, “sure, why not?!”
What happened next took me all of two minutes before I had the smoky/spicy/salty almonds roasting in the oven. I didn’t really give them a second thought (other than to remove them from the oven, of course, that’s always helpful.)
At least, not until a couple of hours later when Adam and my mom were raving over how incredibly tasty these chipotle roasted almonds were. I think they both assumed I had bought them that way, but, nonetheless – they were raving.
So, these EASY chipotle roasted almonds are now my favorite ones to make for all-purpose savory snacking! They work really well for a last-minute crowd pleaser, or simply as a make-ahead snack to grab whenever you need something healthy, filling, and packed with savory, spicy flavor.
Since the first happy accident, I’ve made these almonds twice, and it’s safe to say they’re now a go-to snack for Adam and I that takes absolutely no work to prepare.
I love that when you make your own, you can adjust the spice exactly to your taste and use your favorite oil for roasting. These almonds are healthier and tastier than any similar store bought version and couldn’t be easier – I have a feeling they’ll easily become a favorite for you too!
Easy Chipotle Roasted Almonds {Paleo & Vegan}
Easy Chipotle Roasted Almonds {Paleo & Vegan}
Ingredients
- 3 cups raw almonds
- 1/2 tsp chipotle chili powder 1/4 if you prefer less spice
- 1/2 tsp smoked paprika
- 1 Tbsp olive or avocado oil
- 1 tsp fine grain sea salt divided
Instructions

Preheat your oven to 325 degrees F and line a large baking sheet with parchment paper

In a large bowl, toss the raw almonds with the oil, spices, and half of the salt. Spread out the almonds in a single layer on the parchment lined baking sheet.

Roast in the preheated oven for 25-30 minutes, stirring twice throughout to allow the almonds to evenly brown.

After removing from oven, sprinkle with the remaining salt (or enough to suit your taste), allow to cool on the baking sheet, then serve! Store leftovers in a covered container in the refrigerator or at room temperature. Enjoy!
