Decadent and unbelievably delicious Chocolate Frosted Chocolate Chip Paleo Donuts that are also nut free, dairy free, grain free. They’re baked in a donut pan, then frosted with rich Paleo chocolate ganache for a memorable healthy treat.
I oddly find myself making the most decadent treats totally on a whim. I can have a bunch of recipe ideas written in my phone, and then some sort of chocolate vision will hit me and an hour later it’s all over. The Paleo donuts have been made, I’m eating one, and of course making sure I write all the ingredients down so it wasn’t for nothing!
I wish there was a way to plan for these random moments of inspiration/chocolate cravings, but, well you probably know chocolate cravings. They aren’t easy to reason with most of the time and they sort of make themselves boss.
Sometimes chocolate-as-boss is a dang good thing when it results in recipes like these chocolate frosted chocolate chip Paleo donuts! And really – these are seriously easy to make – don’t be intimidated by the “donut” label if you don’t own a donut pan. Since they’re baked, a muffin/cupcake pan will work just the same!
Since this whole little project happened rather quickly, I took the “easy” route with the ganache frosting, too – it’s just 2 ingredients and makes the absolute best chocolate ganache – whether we’re talking Paleo or not!
Who wouldn’t love these? Chocolate haters aren’t welcome to answer that. Hehe. But anyway, as I’m writing this I have one eye on the donuts and the other on everything else I need to get done before I leave for vacation tomorrow. I hate even mentioning it because it sounds so annoyingly, um, basic? Boring? Pretentious? Maybe all of those things, so I will keep the rant short.
And of course, at least there are no more diapers, at least the baking is done so we have things to eat while I pack, and at least I have planned posts for next week! Three posts, to be specific, and one will be from a special guest (one of the kids!) So we’re almost all set. (Don’t forget to post the recipe Michele. Pictures are great, but they need the recipe.) Right! So here we go – lets make Paleo donuts!

Chocolate Frosted Chocolate Chip Paleo Donuts {Nut Free}
Ingredients
For the donuts
- 3 eggs
- 1/2 cup full fat canned coconut milk*
- 1/4 cup organic refined coconut oil melted and cooled
- 1/4 cup pure maple syrup
- 1 tsp pure vanilla extract
- 1/2 cup organic coconut flour
- 3 tbsp tapioca flour
- 1 tsp baking soda
- pinch sea salt
- 1/3 cup mini Enjoy Life chocolate chips
For the frosting
- 1/2 cup mini Enjoy Life chocolate chips
- 1/3 cup full fat canned coconut milk*
Instructions

Preheat your oven to 350 degrees and lightly grease a donut pan by brushing with coconut oil**

In a large bowl, whisk together the eggs with the creamy coconut milk, maple syrup, coconut oil and vanilla. In a smaller bowl, combine the coconut flour, tapioca flour, baking soda and salt.

Add the dry ingredients to the wet, mixing gently, then stir in the chocolate chips. Due to the coconut flour the batter will be thick.

For donuts, I recommend transferring the batter to a plastic bag with a small hole cup on one corner so you can pipe it neatly into the donut molds. Alternatively, you can spoon the batter into the molds.

Bake in the preheated oven for 15-20 minutes or until set, and a toothpick inserted in the center of a donut comes out clean.

Allow donuts to sit in the pan for about 2 minutes before carefully transferring to wire racks to cool completely.

While the donuts cool, make the ganache. In a small saucepan over very low heat, melt the mini chips with the coconut milk, stirring the whole time, until a thick shiny mixture forms, then remove from heat and set aside.

Once donuts are completely cooled and the ganache has cooled and thickened, you can frost the donuts by spooning or drizzling the ganache on any way you like! It will thicken but remain creamy at room temp.

Serve and enjoy! Store leftovers covered in the refrigerator up to 3 days.

* I refrigerated the can overnight, discarded half the liquid in the can and blended the rest to a creamy consistency before adding.
**I used a 6 cavity donut pan - alternatively you can use a 12 cavity mini-donut pan or a muffin pan

I usually crave chocolate after dinner and so I always keep a stash of dark chocolate in the house. However, I love adding chocolate chips to stuff I bake for breakfast/snacks- its just the right amount of sweetness for earlier in the day. These look amazing and although I don’t have a donut pan I could totally see myself making them in a muffin pan.

I do have a donut pan but I rarely use it! it’s a shame too since the donut pan really does bake up nice donuts easily!

Hee, I loved your talking-out-loud reminder to yourself 🙂 I don’t trust people who don’t like chocolate.
I do have a donut pan and used it a long time ago to make rice protein powder donuts and they were delicious! I don’t even remember what else was in them but I’m a big fan of rice protein powder and sort of made up my own “recipe” that someone else I’m sure would not have liked. They were kind of chalky but I tend to like chalkiness (like sometimes coconut flour pancakes can be a bit dry/chalky). Okay now I ramble.
Yes, I love chocolate and usually have 1 square of 100% dark at night.

That’s so sweet Amanda 🙂 I don’t know if I’ve ever stopped at one square of chocolate, way too good! And coconut flour is tricky with the chalkiness and takes a lot of practice balancing it out with liquid/fat but we’re probably just used to it too.

I’m not actually paleo, so not worried about some dairy. Would regular milk work?

Coconut milk is really thick, so I don’t think it would act the same way in the recipe. Perhaps heavy cream would be a better fit? I haven’t tested it so I’m not sure.

This is a great recipe! I made them with coconut nectar instead of maple syrup, and added a teaspoon of coconut butter to the frosting…delicious! I also put them in the fridge to harden the frosting a bit =D
